What's for Dinner?

Fried fish Po’boys are where it’s at! Walleye and halibut are my absolute favorites. Lingcod works extremely well in a blanket of bread as well
 
Wife baked a ham with cheesy green beans, au-gratin potatoes, cornbread and pasta salad sides.

Excellent dinner
 
Isn't there supposed to be some traditional New Year's meal (wanna say it's ham, black eyed peas, greens) that is supposed to be good luck, or am I imagining that?
 
I’ve never heard it but it may be true. Hell if that’s the case we all need to make it tonight then. Will have to substitute the greens with something tho, maybe cooked cabbage
 
I don’t make fried chicken often. But when I do, people are my bitches.

I gave up making it many years ago when I finally figured out that I could enjoy better without the fuss (and the mess).

There is a place near me that has been making fabulous fried chicken since 1964 that is my go-to on the rare occasions that I partake.

 
Did it for 5 min in the deep fryer and finished in the oven. I realized as I was putting the flour together that I did not have any corn starch (which is what makes it crispy). So I figured 'starch is starch' and dumped a cup of instant potatoes in and a little baking powder. Worked like a charm. It was really good. The deep frying part is a pain. I have one but am not a believer that you can really air fry chicken and get the same results.

I have a go-to recipe for crispy wings cooked entirely in the oven. No oil at all. The secret ingredient is a bit of baking soda in the seasoning mix. Works with thighs, too. Never tried with breasts though.
 
The issue I've had with the air fryer (granted, I've only tried once or twice) is that without any oil, the flour doesn't brown... it looks like someone sprinkled baby powder all over my fried chicken. I've heard you can spray cooking spray on it, but I'm not doing that as God knows what all is in cooking spray. Anyway... rich people problems as they say...
 
Got an air fryer for Christmas and did these wings yesterday. Got them nice and crispy. I did read the secret was baking powder as it draws the juices out of the chicken to help crisp it up.

Made empanadas last night that were really good. Not as good as authentic Latin American empanadas but they'll work. My crust was too pie-like, imo though my 14 year old told me if I change anything she'll throw something at me.

Made a quick shrimp salad with it, with lime juice, mayo and sour cream (and spices) - really light and nice.

Made Drunken Beans last night with a Mexican Lager from Brothers in Harrisonburg and some Tequilla we got in Mexico. They ended up really great over some cilantro/ancho rice. Not as good as the rice and beans we had in Puerto Rico but still pretty damned good.

That sounds delicious. I did a brisket yesterday just for myself while I watched the games. Was very good. I injected with a favorite beer/worchestershire sauce marinade, put on a couple favorite rubs with some black pepper, did a pink butcher paper wrap for the last two hours. My brisket is most improved in 2020.
 
Damn son. I have a 16lb-er waiting in my basement freezer for when we can have social gatherings again. Psyched to smoke that puppy at some point (hopefully this year) to celebrate.

Been making my own bread lately (yeah, lazy stereotypes are accurate sometimes) and experimenting with a lot of flour combos and shaping and all kinds of stuff. Been fun. Made a cheese bread yesterday with Ricotta that turned out really well. Thought it was going to be too wet because... Ricotta... but it turned out well.

I gotta get the butcher paper. I'm good with the point but the flat has been an enigma for me. I probably should separate them but i've been trying to do the cut whole.
 
Yep, the butcher paper is money for brisket, at least in my opinion.

I like to add marinade to my brisket - I used to just put a cup in when I pulled and foiled at 170, but now that I'm using butcher paper, I inject the brisket before I put on rub and put it in the smoker. A bit of a pain in the ass, but definitely is a plus taste-wise.

For my pre-surgery meal on Sunday, I did a whole chicken in the instantpot. Rubbed it down with a vinegar/lemon/paprika/spice mix, seared it in the pot, then added chicken stock, a bit more lemon juice, cut up fennel and fresh mushrooms. The chicken was fall apart good and we served the vegetables and broth over rice. It was really nice.
 
Got a ham on sale over Christmas and stuck it in the freezer. Pulled it out last week because... Wednesday. Then over the weekend I made a pork shoulder in mojo sauce and will take the leftovers with homemade Cuban Rolls to make Cuban Sandwiches with citrus pickles. Pretty pumped about this tonight, last time I made this it was pretty terrific.
