What's for Dinner?

I was away all last week for work and missed cooking. Made up for it yesterday and today. Yesterday made the kids and myself gourmet grilled cheese sammiches; then did Chicken Marsala with roasted brussels sprouts and asparagus, melting potatoes and salad last night. Also made Cinnamon Rolls from scratch that I finished this morning. They were ridiculous. Made my first souffle today for lunch which was really good. Basic cheese version, but it rose properly and did what it needed to do. Then tonight I made whole wheat pizza with fresh made pesto and goat cheese. Superb. Never been a fan of whole wheat pizza crust but this worked brilliantly. Really great meal.

Making my slow cooker bolognese sauce tomorrow. Pasta tomorrow, lasagna next week and then another batch of pasta later...
 
Nothin crazy had meatloaf, cheesy potatoes, green beans and croissants. Pretty damn good!
 
Winging it on the grill tonight. Came up with this chicken drumstick recipe.

Limey Grilled Chicken Legs

Make puree from:
Lime juice
Jalapeno
Fresh garlic
Cilantro
Kosher Salt
Smoked Paprika
Can of black beans
Fresh ground black pepper
Olive oil

Divide puree into two batches. Coat chicken legs in half of mixture. Grill and recoat with other half of mixture halfway through grilling.
 
Made the family ground sausage, scramble eggs and muffins this morning. Is it wrong if I was singing the "derr, be dee da derr, ber du da derr, BORK BORK BORK"?

Mashed up some spam, mixed with 1/2 cup milk and scrambled eggs and threw in a few cups of rice. Changed up the rice with a couple beef bullion cubes, garlic salt & Cajun spice.

My kids and I destroyed it! Definitely one to make again
 
Baked some thick ass salmon fillets. Played around with marinades but the favorite was butter, honey, molasses, garlic powder and all season salt. I know it doesn't sound all that but holy cow it was good!
 
Made some linguine the other night with scallops, lemon, goat cheese, basil, snow peas, cherry tomatoes, and some white wine. Off the hook good!
 
Since it's our anniversary we went to the steak joint we went to on our first date. I ate a 10 Oz prime rib with garlic mashed potatoes, and a bowl of calm chowder
 
Alright took some left over salmon and tore it from the fillet, almost minced. Added cayenne pepper, Alfredo sauce and served it over cheese tortellini for lunch.

Let's just say I'll be doing the same version for dinner.
 
Sounds amaze-balls Win!

Made Spanish Rice tonight which was awesome. Then cooked squash, mushrooms and onions in bacon fat (because... of course I did), cooked some shrimp in butter, loaded the veggies and shrimp over the rice and topped queso fresco.

Yes please.
 
Oh wow that sounds pretty good as well Goal. How'd it turn out?
 
Yum. I cooked the veggies a LONG time to get a nice char on them, nice carmelization. The queso didn't add as much as I was hoping, but it was still really good.
 
Yeah I tried making my own queso before and it sucked. I'll stick to soups for creativity for the most part.
 
Yeah, I've never been able to find a really good white cheese melting dip like in the restaurants, which is a shame because that stuff must have crack in it. I just crumbled up some queso fresco (like feta, kinda) but it didn't really melt properly. The rest was really good though.
