What's for Dinner?

I smoked some beef ribs yesterday at the campground in Myrtle for today's game. They are in the hot hold oven right now holding around 155 F IT.

Beef ribs and a Commanders win! Scalloped potatoes and texas toast for side. Doesn't get much better.

How did you do the beef ribs? I’ve wanted to smoke beef ribs for years but it’s just never happened.

I love making scalloped potatoes. I have a mandolin and love to break out and for some scalloped potatoes.

I have two methods now. The old way (far right method) with a one hour rest and you eat them same day. The new way (middle method) is a two day cook where you hold them 15-18 hours at 150 F.

I might like the old method better for beef ribs. I'm not sure the hot hold adds anything to a beef rib.

Full disclosure: I get them at the local Latin market. They're freshly made every day and still warm when I buy them. They're crunch & tender. The guy cuts them up for me in bite-sized chunks. I eat a couple before I'm off the lot!


Y'all crack me up! I'm in the most Latino part of ATL. Everything is everywhere, except American food. I worked in a great Mexican cafe for 10 years, my boss and I would love to get the band back together. Friday night special was Filet Fajitas, the best chimichurri sauce you've ever imagined (it was made with our signature Sangria, that I made by hand as I was head bartender.)

All good girl! I'm trying to get better about not derailing threads. I have very strong Latin roots over the past 15 plus years so I appreciate that food and ethnicity.

It is a rather rainy, dreary day here in North Carolina. I have the house to myself today. My plan is to watch movies, make a couple things for dinner, and crack open a beer or two.

Worse ways to spend a day.

I am going to do a Tortellini soup for dinner, and also make some Italian-style Panini sandwiches to go with.

With chicken stock, canellini beans and escarole?
 
I decided to do a manhattan clam chowder instead. Local grocer now sells generous bags of frozen clam meat. One of my favorite soups.
 
I ended up doing a Manhattan Clam Chowder yesterday that was so damned good. We don't need food, but I am going to cook today anyway. It's a long game day and gives me something fun to do. Settled on doing a Gumbo - never done one before and I'll have to find File powder which may not be easy. My go to New Orleans dish is Jambalaya - never done a gumbo before, but no time like the present.
 
Any special dishes for the Chicago game tonight? What are you guys eating? I got homemade french dip going on
 
Beef ribs for me. The golf course closed today due to all the rain so I was able to scramble and get two bones going in time for the game.

French dip sounds good.
 
Manicotti. Arugula salad, with gorgonzola, red onions, ripe black figs and toasted pine nuts; balsamic vinaigrette
