Yep - Mt Airy Locker Co., aka Wagner Meats. That's where I get my pigs. That's also where the sunshine burger ground beef comes from.
I lived in Boyds and that's where I would go to get a quarter side of beef

I used to make roulades of sole stuffed with crab and a simple lemon butter parsley meuniere sauce. Kinda like below. 2 per order. Simple. Easy peasy.

Make a classic crab cake recipe with jumbo lump crab and stuff it in the fish. Easy peasy

Too late. I already found it. It's in our recipe book but it's also on the internet.

The only thing I would add is make sure you start with fresh fish. I don't even buy grocery store fish anymore, except in rare cases. Get it from a source you trust.

Also, our original recipe included pimientos. I think they're mostly for color. You can get them in a jar.

My husband did all seafood in the house except the salmon...that was my deal. He made the best salmon cakes, lump crab cakes, and seared scallops ever. We ate really well. :love:
