The 1st Round Pick
I got a food processor for Christmas. Looking for some good ideas for that. I've been using my blender to "process" stuff lately, and that's worked ok, but it's kind of tedious for some stuff.

- Get a big pot and put in a few tablespoons of butter and a cut up large white onion into it and sautee on medium heat until onion starts to turn clear.
- Add 1 can of chicken stock and 1 cup of water and bring to boil over medium heat.
- Add 1 can of corn, 3 well chopped carrots, a chopped head of celery, and 3 cubed red potatoes and cook 10 minutes.
- In a bowl, whisk together 1/3 cup of cake flour and 1.5 cups of milk.
- Add another 1.5 cups of milk to the pot, along with 1 teaspoon of celery salt, 1 teaspoon of sea salt, and 1/2 teaspoon of pepper to the pot, stir and cook an additional 10 minutes.
- Add 1 pound of fish (cut into small pieces) to the pot, stir in and cook 5 minutes.
- Add 2 cups of shredded cheese to the pot, stir in, and cook 5 minutes.
- Eat about 10 bowls, then make more and repeat
There are only a handful of cheeses that work at all in this recipe, as I found out the hard way. The absolute best is smoked Gouda. After that, my choices in order would be extra sharp Cheddar, Gruyère, then Havarti. Any other cheese I tried either didn't work at all (the consistency got gritty) or it just sucked.
My personal favorite is using smoked Gouda for the cheese, and cod for the fish. Awesome stuff. I like to add a lot of pepper to mine, but I tone it down for the recipe when I give it to people, because not everyone thinks pepper is as wonderful as I do lol.
Tonight I am making Chicken Tortilla soup from a recipe that Mark (Chewy as many know him) gave me. I've made it several times and is a big hit with the family.

Thanks brother, did it myself with some fresh salmon tonight. Sometimes I alternate between the sprouts and some good slaw, but as anyone in the south knows, great slaw is very hard to come by anymore. Too many places carry nothing but that overly sweetened yankee bs. I've come to the conclusion I'm just gonna start making it myself. Especially because that's apparently the only way I'll ever be able to get it with brown mustard seed again.I wasn't blown away with Mark's 'tortilla soup' recipe. If I had it to do over again, definitely would've dialed the chipotle way back, too hot for most of my family. But it was good.

Mmm... spaetzle! A restaurant I worked at in South Florida introduced me. They had a veiner schnitzle dish with spaetzle on the side and a nice lemon butter sauce! Delicious!
