What's for Dinner?

I got a food processor for Christmas. Looking for some good ideas for that. I've been using my blender to "process" stuff lately, and that's worked ok, but it's kind of tedious for some stuff.

Actually, I realized I already had once you said this :laugh:

- Get a big pot and put in a few tablespoons of butter and a cut up large white onion into it and sautee on medium heat until onion starts to turn clear.

- Add 1 can of chicken stock and 1 cup of water and bring to boil over medium heat.

- Add 1 can of corn, 3 well chopped carrots, a chopped head of celery, and 3 cubed red potatoes and cook 10 minutes.

- In a bowl, whisk together 1/3 cup of cake flour and 1.5 cups of milk.

- Add another 1.5 cups of milk to the pot, along with 1 teaspoon of celery salt, 1 teaspoon of sea salt, and 1/2 teaspoon of pepper to the pot, stir and cook an additional 10 minutes.

- Add 1 pound of fish (cut into small pieces) to the pot, stir in and cook 5 minutes.

- Add 2 cups of shredded cheese to the pot, stir in, and cook 5 minutes.

- Eat about 10 bowls, then make more and repeat :laugh:

There are only a handful of cheeses that work at all in this recipe, as I found out the hard way. The absolute best is smoked Gouda. After that, my choices in order would be extra sharp Cheddar, Gruyère, then Havarti. Any other cheese I tried either didn't work at all (the consistency got gritty) or it just sucked.

My personal favorite is using smoked Gouda for the cheese, and cod for the fish. Awesome stuff. I like to add a lot of pepper to mine, but I tone it down for the recipe when I give it to people, because not everyone thinks pepper is as wonderful as I do lol.

Tonight, I created my own original soup for the cold night, we'll see how it goes. Here's what I did.....

I took a porcelain coated cast Iron stovetop crock, filled it with chicken broth, diced carrots, diced onions, chopped scallions, whole garlic, soy sauce, miso soup base, soy beans, chopped fresh baby spinach, mushroom caps, chopped napa cabbage, and chopped celery. I slow cooked it for 7 hours, then I made a batch of small meatballs made with pork, parmesan, pepper, onion and garlic powder and fresh chopped parsley, nd threw them in for the last hour.

I have about 15 minutes left until it's ready, and it smells like it will kick some serious ass.
 
Tonight I am making Chicken Tortilla soup from a recipe that Mark (Chewy as many know him) gave me. I've made it several times and is a big hit with the family.

Chicken Tortilla Soup


From Mark Henderson (Chewy)





3 cups chicken stock
1 pound chicken tenders
1 bay leaf, fresh if available
1 tablespoon extra-virgin olive oil, 1 turn of the pan
4 slices thick, smoky center cut bacon, chopped
1 onion, finely chopped
4 cloves garlic, chopped
2 chipotles in adobo, chopped, plus 2 tablespoons sauce
1 (28-ounce) can crushed fire roasted tomatoes
Salt
4 cups lightly crushed corn tortilla chips
2 cups shredded fresh smoked mozzarella or smoked sharp white Cheddar, 3/4 pound
1 lime, cut into wedges
1/2 red onion, chopped
Freshly chopped cilantro leaves, for garnish

Bring broth to a simmer and add chicken tenders, poach 6 to 7 minutes with a bay leaf.

While chicken poaches, heat extra-virgin olive oil in a medium soup pot or deep skillet over medium-high heat. Add bacon and cook until crisp then remove with slotted spoon. Drain off excess fat, leaving 2 to 3 tablespoons in the pan. Add onions and garlic to the skillet and cook 5 minutes then stir in chipotles and tomatoes.

Remove chicken from stock, dice and then add to soup. Pass stock through a strainer then add to the soup.

Place a pile of crushed tortilla chips in the bottom of each soup bowl. Cover liberally with smoked cheese then ladle the hot soup down over the top. Serve with lime, raw onions and cilantro at table to finish the soup.
 
Anytime you make a vegetable-based soup, I recommend adding some parsnips. Rarely used vegetable that is a great soup addition.

Tonight, did something simple - Buffalo chicken sandwiches, and some french onion soup.

Oh, and Pete - I'm going to have to try Mark's recipe. That sounds good!
 
I was just informed that my fish taco recipe has been chosen as a top 20 finalist in a recipe contest out of 27,000 entries.

Ingredients: 2 Avocados (sliced), 1 package alfalfa or bean sprouts, 1.5lbs fresh tuna or salmon, 6 tortillas or flatbread, 3 fresh limes, 1 TBSP minced garlic, 1/2 tsp coarse ground black pepper, 1/8 cup olive oil, 1 cup cooked black beans or lentils, 1 cup sour cream, 1 cup feta cheese, 1 large ripe tomato.

1. Chop fish into small cubes.

2. Combine fish, olive oil, pepper, garlic, freshly squeezed juice from limes in bowl, and allow to sit for 10 minutes.

3. Pour these ingredients into skillet/pan on medium heat, constantly stirring with wooden spoon to prevent burning or sticking, and cook for 6 minutes, chopping with the spoon to break apart the fish.

4. Lay out tortillas, and spread 1-2 TBSP of sour cream down the middle of each one.

5. Put 1-2 TBSP of beans along the middle, and top with fish, sprouts, cheese, tomatoes and avocados.
 
Going to try both Chewy's tortilla soup and Extreme's fish tacos tonight.
 
For Christmas, I got Mrs. Goaldeje (or as I call her in the bedroom, "Mrs. Goaldeje") a panini press/griddle/grill combo thing.

She roasted a whole chicken last night which was wonderful. So I took some of the leftovers, sliced up a bagguette on the bias, added in some smoked gouda and a homemade honey mustard (honey, mustard and mayo), brushed each side of the sandwich with olive oil and pressed away.

They were delicious, and I was starving, so I didn't take any pics. Sorry...
 
I highly recommend's Chewy's Tortilla Soup. I would also recommend a double batch if fixing for 4 or more people. It's that good and you will want seconds.

Last night we had grilled NY strip, salad, and my son made homemade spaetzle.

And what is spaetzle?
 
Spaetzle is a soft egg noodle swimming in butter. You see it a lot in German dishes. If you try it once you will be hooked.
 
An All-American Hoagie. Made with tomatoes, lettuce, onions, steak, cheese, cucumbers, green peppers, and spinach leaves. Lemon pie.

Tomorrow - lunch. Rotisserie chicken. Green beans. Red potatoes.

Tomorrow - dinner. Whatever Boone delivers.
 
Mmm... spaetzle! A restaurant I worked at in South Florida introduced me. They had a veiner schnitzle dish with spaetzle on the side and a nice lemon butter sauce! Delicious!

Tonight I had a white pizza with goat cheese and prosciutto.
 
I wasn't blown away with Mark's 'tortilla soup' recipe. If I had it to do over again, definitely would've dialed the chipotle way back, too hot for most of my family. But it was good.

Thanks brother, did it myself with some fresh salmon tonight. Sometimes I alternate between the sprouts and some good slaw, but as anyone in the south knows, great slaw is very hard to come by anymore. Too many places carry nothing but that overly sweetened yankee bs. I've come to the conclusion I'm just gonna start making it myself. Especially because that's apparently the only way I'll ever be able to get it with brown mustard seed again.

Extreme, I don't know if you've tried this but, at least to me, prosciutto and either honeydew melon or canteloupe is an excllent breakfast combo.
