What's for Dinner?

Stew I made last night. The beef actually came out a little dry which I didn't think was possible when you use a slow cooker. Maybe I "browned" it too much?

Don't know if you caramelized the beef or not, but I've found that's the secret to the best beef stew ever.
 
Before putting in the slow cookier I tossed it with some flour and fried it in olive oil to brown the outside.

I cook it with a sprinkling of sugar (you don't need much, a light covering) to caramelize the beef first (while browning it). This locks in the juices, and ensures the beef won't dry out. :)

I will try this next time :) I thought you just had to brown it and that did the trick.
 
Making some of Boones chili for lunch today, with new castle beer. Tastes great so far...
 
My father in law is visiting today and loves Italian. In fact, I am convinced it's the only thing he eats. In honor of that, I'll be making some shrimp fra diavolo, with some homemade garlic knots.
 
Homemade split pea soup w/ham hocks tonight. That time of year.
 
Yeah, split pea soup sounds pretty darn good, but I need something with some healing effect. I am catching a cold so I had Pho tonight.

Pretty soon my mom will make her potato soup (Man I sure do like living a block away from my mommy! :laugh:) That is my favorite!

I made that the other night, I love it. Funny, since I hate it from the can. I guess I've just spoiled myself :D

This was tonight's feast, with a side of garlic knots. Awesome stuff.

It is an incredibly gorgeous day here in NC today. Literally not a cloud in the sky. Bit of a bite in the air, but nothing a sweatshirt or fleece jacket can't handle. In other words...

P-E-R-F-E-C-T.

Had to work this morning and hit the market on the way home. Picked up some ground bison. Going to do some burgers with it on the grill tonight, adding in some grated sharp cheddar and chopped mushrooms. On the side, going to stuff some poblano peppers. I am going to blanch the peppers, then stuff them with a combination of crawfish tail meat, goat cheese, sauteed shallots, white rice, cilantro, and chopped tomato, and then toss them on the grill to finish them.

The Poblano pepper represents (for the believers amongst us) some of God's best work. If you've never stuffed and grilled some of them, you really haven't lived.

The challenge has been thrown down. Beat bison burgers and stuffed grilled Poblanos. I dare you :)

Pardon my french, but holy **** that sounds delicious!!!

As for me, I'm making homemade bagel bites and wings tonight for football.
 
It was pretty good :)

Tonight i did angus beef/turkey burgers with smoked cheddar and ****ake mushroom, and some grilled fries (Idaho baking potatoes sliced x 6 lengthwise, and soaked in a combo of olive oil, lemon juice, garlic, cumin, salt, and fresh ground pepper). Pretty. Damn. Good.
 
Chicken breast. Julienne salad. Homemade cranberry sauce (cranberries came from a friend's bog a few miles from here). Green tea.
 
Wow - now that's a healthy meal. You're probably covered for a month on the Vitamin C front :)
 
Everything I eat is healthy and often tilted to Vit. C. My doctors make sure that a strong dosage of phytonutrients go into the system as well.

Hey, I'll have the occasional burger, pizza, bbq ribs, etc.
 
Grilled salmon, quinoa with kale, diced tomatos, okra, and corn along with a bowl of vegetable and barley soup.

Speaking of healthy....:)
 
I decided to do Chinese tonight. Homemade though, didn't need the diarrhea this go around.

I made Chicken Chow Mein (I did a honey/lemon/ginger glaze for the chicken), and tried my hand at some steamed buns for the first time. They came out awesome, I even made the red bean filling myself. Everyone seemed to love it. Definitely beats Chinese take out.
 
Was in the mood to grill, so doing a little pre-Thanksgiving deal. 10 lb turkey on the grill. Stuffed it with halved tangerines, onion, whole garlic, bay leaves. Rubbed her down with olive oil and coated in rotisserie chicken spices. 3-4 hours indirect heat on the grill, and we'll be in business. Best turkey you will ever have is grilled turkey (set aside the fried turkey hype and try it). If you can brine it for a few days prior to grilling, even better.

And yeah, gas grills are ideal for this if yours is large enough.
 
Undecided at the moment. Need to grab a shower first. Thinking it could be a sirloin steak, steamed broccoli, small salad, pineapple slices, and green tea.
