Don't know if you caramelized the beef or not, but I've found that's the secret to the best beef stew ever.
Before putting in the slow cookier I tossed it with some flour and fried it in olive oil to brown the outside.
I cook it with a sprinkling of sugar (you don't need much, a light covering) to caramelize the beef first (while browning it). This locks in the juices, and ensures the beef won't dry out.![]()

I made that the other night, I love it. Funny, since I hate it from the can. I guess I've just spoiled myselfHomemade split pea soup w/ham hocks tonight. That time of year.


It is an incredibly gorgeous day here in NC today. Literally not a cloud in the sky. Bit of a bite in the air, but nothing a sweatshirt or fleece jacket can't handle. In other words...

Had to work this morning and hit the market on the way home. Picked up some ground bison. Going to do some burgers with it on the grill tonight, adding in some grated sharp cheddar and chopped mushrooms. On the side, going to stuff some poblano peppers. I am going to blanch the peppers, then stuff them with a combination of crawfish tail meat, goat cheese, sauteed shallots, white rice, cilantro, and chopped tomato, and then toss them on the grill to finish them.
The Poblano pepper represents (for the believers amongst us) some of God's best work. If you've never stuffed and grilled some of them, you really haven't lived.
The challenge has been thrown down. Beat bison burgers and stuffed grilled Poblanos. I dare you![]()
