What's for Dinner?

I went to my cousin's cookout today. This morning she asked me to make some baked beans, and to make a ****load of them. I told her I hate canned stuff, so I had to make them from scratch, but I had never tried it before and hated every recipe I looked up. So she simply said, "You're you. Just wing it, it'll be killer." So that's exactly what I did. And I swear, I have never eaten better tasting baked beans in my entire life, and I am very picky about them. About 30 people showed up, and every single person spent hours telling everyone how good the baked beans were. My cousin's husband I swear must have eaten 5 pounds himself, you would've thought I put crack in them.

All total I made just under 40 pounds, and it was tapped out completely in a little more than an hour. I did good :D

I will post the recipe if anyone wants it, I made sure to write down everything I was doing.

Doing some sausages and burgers on the grill and some squash and zucchini as well. Apple pie for desert.

I made a ton of them, but I scaled down the recipe to a more normal portion - it will fill 2 of those 13x9 foil pans. For the beans and the molasses, the brand absolutely matters, everything else just get whatever brand you prefer.

Extreme's Baked Beans

Ingredients:

4 large cans of Campbell's pork and beans (the great big 3lb cans)

3/4 lb of light brown sugar

1/4 cup of Grandma's molasses

2 medium-large yellow onions (Vidalias won't work, they cook differently)

2 cups of ketchup

6 tablespoons of mustard

1 lb of bacon

1 teaspoon of natural hickory flavored liquid smoke

1 teaspoon of browning sauce (I use the kitchen banquet brand with the yellow label in the little black bottle)

2 tablespoons of worcestershire sauce

4 tablespoons of granulated garlic

1/2 cup of juice from a jar of Mezzetta pepperoncini peppers (this the brand actually matters too, because a lot of brands use a really strong vinegar based juice, and this brand is more the actual juice from the peppers)

1/4 cup of hot bacon grease (don't be a girl, this makes a difference)



Instructions:

Fry the entire pack of bacon for 2 minutes on each side of the strips on 325 degrees. While it's frying, dice up the onions. When the bacon is finished, cut it up into pieces and throw it in a large pot, the bigger the pot the easier the rest will be.

Without draining the bacon fat, sautee the onions in the grease until tender, then throw them into the pot with 1/4 cup of the bacon grease.

Add to the pot the rest of the ingredients except for the beans, and simmer it on medium heat until thin and dark looking, and bubbling nicely (about 7 minutes or so)

Open the cans of beans, and one can at a time, dump the beans into a strainer and rinse off thoroughly, then drain and add to the pot. Repeat this for each can. Mix the beans and the sauce really good to coat all the beans, and reduce heat to medium low for about 5 minutes.

Divide the mixture into two of the 13x9 pans, and put in a preheated oven on 325 degrees for 10 minutes, then turn off the oven and let them sit inside the closed oven for about 20 minutes.

I guarantee you'll never eat better beans. I made some more today for another cookout, and they were slaughtered once again. When you go to two cookouts that between have things like ribs, steaks, crab legs, oysters, etc. and the talk of the parties is a side dish, you know you knocked it out of the park :D
 
Man you take out those 2 'Devils vegetables' and that sounds pretty friggin amazing.

Oh and when you say granulated garlic that's garlic powder right...not crushed cloves?

It is a powder, but slightly different than garlic powder.

Lol, so they are healthy baked beans! :p

Smoked a pork shoulder last night and today. Made a nice NC BBQ sauce to go with. Also made some baked beans (no canned stuff) and pasta salad. It was delicious. My Godmother came for dinner and brought a cherry pie and a strawberry rhubarb pie from a Mennonite Bakery for dessert.

Trying to lose weight, but it would be rude to not sample them, right? RIGHT?
 
You were in the right Goal, extremely rude to turn down pork shoulder and strawberry pie. Hell a crime in some countries.
 
Tonight, the cafeteria was serving spicy buffalo wings - amongst other things. So, I had to go and give it a try! Very good - not quite like a couple of places in the northeast, but darn good. Had some green beans and a salad too. Jello for dessert.

Then a surprise...

Not too many go for the spicy wings, so the cafeteria brought a bunch of them over a couple of hours ago - more for lunch and dinner tomorrow!
 
Made ground turkey Kofta last night with grilled zukes & a brown rice/quinoa mixture. So delicious! Got the recipe from Eating Well magazine - so many good recipes from there!
 
Week at the beach has been a food orgy. Just to name a few dishes, grilled quail stuffed with wild boar sausage, grilled ostrich steaks on bed of asparagus and blue cheese mashed potatoes, tuna seviche, Maryland blue crabs, Pho and homemade shrimp rolls...tonight lobster. Just ridiculous...
 
We talk a lot about opening a brew pub/restaurant - doubt we'll ever do it, but I'd probably quit my job tomorrow if we decided to do it.
 
I think several of us would give you some occasional income, particularly if there was a Redskins theme or something.

I'd send in an order for the ostrich - if you are able to ship it. Still curious about how it tastes.

Wow Neo, that sounds great.

We had a church picnic this morning, so went light for dinner. Em made a terrific Greek Salad dressing, and I just had a salad with feta and peppers and onions. It was terrifically light and refreshing. Really delicious.
