What's for Dinner?

I'm ashamed of you guys. July 4th and not a single reference to what you're cooking? Shame, shame, shame :)

It's just me and the wife today - and she works night shift tonight, so not sure what I'll do, other than that I'm pretty sure it'll involve firing up the grill. What are the rest of you magnificent bastards cooking today?
 
The kids really want hot dogs. So we got some Nathan's and I will grill them up, we'll have some sort of toppings bar or something. Just had some really delicious pineapple salsa with lunch, thinking about learning how to make my own. It was sweet, but with a kick at the end, really really good.
 
I'm thinking burgers today - I mean, it's the 4th, gotta be either burgers or steaks.... Was watching BBQ Pitmasters a few minutes ago - they were doing 'Cowboy steaks' - holy cow did they look good.

Costco has some Tomahawk ribeyes. Yummmmm.

I'm making slow-cooker hot Italian sausage ragu, because this is America, and I do what I want!
 
Well - since it looks like I'm cooking for just me today, I'm going to grill some ribeyes and cook up some pattypan squash I just plucked from the garden. Picked a gallon of blueberries this afternoon too, but I'm too lazy to do anything with them today. Thinking I'll do muffins for my dept on Monday morning.

Tonight *rainnnnn* we had broiled lemon pepper sea bass, with steamed potatoes, fresh field peas, and garlic/olive oil mushroom & onion mix... best we could do with the weather...
And we bought a new grill 2 weeks ago, dammit!

I think you just inspired me to make peas that way now! I normally am not a huge fan, but that way sounds pretty good!
 
Was in the mood for some chili. Pretty standard approach for me. Chopped 2 onions and some garlic and got that going in the chili pot with some olive oil. Chopped up a bunch of stir fry beef, sprinkled it with kosher salt, fresh ground pepper, cumin, and a little chili powder and added that to the mix along with 3 strips of bacon. Once the meat and onions/garlic browned, added 2 chopped jalapenos from the garden (these are HOT), a large can of diced tomatoes, 4 cans of black beans, a little honey, tablespoon of kosher salt, 4 tablespoons of chili powder, a teaspoon of cumin, tablespoon of oregano, and about 50 oz of water. Simmering now. Got some bread to go with it later. I love me some chili - I could make it 100 different ways and love every version.
 
I know it's unconventional and all but gonna go with a bowl of Kellogg's Special K red berries. So good, and addictive.
 
I'd forgotten how much more powerful home grown Jalapenos are compared to their store bought cousins. Man! Spicy :)
 
Since we have plenty of leftover side dishes from the last half of the week, I picked up some pulled pork from our fave bbq place (my dad's side is East Carolina, so I make my own sauce, lol) with a side of slaw (any will do, add to it whatever you like spice-wise) that you put ON THE SANDWICH, ('tis blasphemy to participate in other non-redneck behavior).
Add "Independence Day", and mix with a dash of Absolut.

Perfect.
 
Not sure if I've posted this recipe before, but its the best thing we make. So effing delicious! Its good as a side, or as a topper for probably anything. I eat it for breakfast, putting over-easy eggs on top. Yummmmmmmmmm.

Sweet Potato Salsa
2 medium-large sweet potatoes, cubed
2 Tbsp fresh cilantro, finely chopped
1 small-medium red onion, finely diced
1 avocado, diced
1/4 cup fresh lime juice
Olive oil - (we use 1-2 Tbsp b/c we're trying to keep it healthy, but you can use as much or as little as you want)
salt to taste

Toss the sweet potatoes & red onion in the olive oil to coat. Pour onto a cookie sheet & bake at 450 for 20 minutes. Remove from the oven, allow to cool for 10-20 minutes. You can skip this step, but the sweet potatoes get mushy if you don't let them cool. Put back in the original bowl, and add all other ingredients and toss to mix. Serve and enjoy your FACE OFF.
 
On my own in the house tonight, made a calamari dish I do occasionally. In a large stockpot, chopped up some celery, onion, and garlic, browned with some olive oil. Added a bag of thawed frozen calamari rings, 2 large cans diced tomatoes and juice, squirt of lemon juice, handful of capers, fresh chopped oregano, salt, fresh ground pepper, and a tablespoon of hot sauce. Cooked on the stove for 20 minutes until calamari cooked and liquid boiling. Turned down heat, added a cup of rice, covered and simmered on low for 30 minutes. Very good :)
 
We hauled out the old rotisserie, took a fresh stewing chicken (not too fatty), stuffed it with some andouille sausage, and rubbed it all over with Webber Cajun seasoning, and have that sucker is set on a medium heat and a slow turn. The skin is crisping up as I type this.
