What's for Dinner?

Okay got skinless chicken breast, rice, red beans, and pepperoni for some jambalaya tomorrow night. Does anyone have a good recipe, and what do you put in it to make it "soupy"? I assume chicken broth but could be wrong. Any advice is appreciated.
 
Teriyaki chicken w/ pineapple salsa, broccoli and corn on the cob as sides. Yummmmm...
 
Last night I tried my first scalloped potatoes with all natural ingredients...no packaged stuff...sliced potatoes, a little bit of organic milk, some olive oil to coat the pan, baked the potatoes and then melted the fresh vermont organic cheddar cheese over the pots when they were close to done. Pretty darn good! Had some steamed broccoli to go with it.

No meat yesterday other than the tuna lettuce wraps for lunch. Mmm... Cutting my meat intake down too. That wasn't a planned thing, but if I do this, I can have cheeseburgers once a week...no bread of course.

Down below 220 since before the back injury. The weight loss has definitely slowed, but I am down 40 pounds, all told, since the beginning of the year, 30 in the last 7 weeks since giving up wheat, corn syrup and sugar.
 
Just made my first batch of jambalaya, turned out decent. Had to leave out some things I wanted like jalapenos but not bad for a first run.
 
Last day of gluttony before the diet restarts, probably go with pepperoni pizza.
 
Last night I had roast beef, potatoes, carrots, and onions - let it simmer in the oven for for about three hours at 325. Tonight, leftovers. :)
 
Asparagus=blah, nasty vegetable. Can't stand onions either, I know i'm alone there too.
 
My cooking style has been cramped by my quest to drop 30 lbs - meaning I'm eating almost nothing but chicken, Fish, and vegetables and no alcohol. Gonna try and find some ostrich this weekend at the farmers market so at least I can have some red meat
 
I cant cut out alcohol ...or I should say I just don't want to. Its not logical in my mind since if I lose weight I'll just gain iy back once I have a beer again.

I love my beer too much to abandon it entirely, but to get down to a weight where I can really do everything physically I want to be able to do, it's a lot easier without consuming a bunch of empty calories. Once I've gotten there, I can usually bump the intensity level up enough that I can drink/eat what I want within reason and stay lean.
 
Simmered some Brussel Sprouts in a nice Martin's Orange sauce (with just a bit of heat in the background - very nice) then threw in some flounder. Very nice lunch at home today, and VERY healthy.
 
What do you guys put in your homemade home-fried potatoes, for flavor and spices, for those of you who make it ?

I just cook them in butter and add a lot of onion...

I'm with El - add some onions. Also some finely diced bell pepper will really set them off. They don't need much in the way of spices; garlic powder, salt & pepper will do the trick! Easy on the garlic powder though; breakfast is one meal in which I think there can be "too much" garlic. :)
 
Was doing yard work all day, working in the garden mostly, perfect day for something in the crockpot. Bought a 6 lb brisket. Took some ketchup, brown sugar, balsamic vinegar, added fresh pepper and kosher salt, and gave it a good rubdown. Put it in the crockpot on top of some sliced onions. topped the meat with about 10 chopped garlic cloves, then some more onion slices. Cooking on low for 9 hours. Going to make gravy from the drippings with it's done. For a side, slicing some potatoes, going to baste with some olive oil, sprinkle with garlic salt and pepper, and broil them.
 
Wow - turned out very nicely ... Very tender, almost like pot roast. Will definitely so it again.
 
Going simple with grilled Brats, pasta salad backed with Country Time lemonade.
