What's for Dinner?

It's when you pulse cauliflower florets in a food processor, and then you cook them in a pan with a touch of butter for just a minute or two to heat it through. Its mock-rice!
 
Cauliflower rice sounds good but....it would tear me up.

Got a dozen frozen soft crabs in the freezer. Think they will make a great supper.
 
Oh man - awesome dinner - simple and fantastic. Steamed shrimp. Thawed grocery store jumbos, and added to a pot with 4-5 cups of white/cider vinegar, 1/2 cup Old Bay, half a jar of bay leaves and some salt and pepper. Steamed perfectly. Also made kale with fresh kale, added to a pot with some olive oil, pint of chicken stock, some country ham chunks, and a little water. Brought to a furious boil (amazing how much greens boil down) and then simmered for 45 minutes.

I swear - probably the best meal I've had in 3 or 4 months. Simple and amazing.

Trying a PA Dutch corn and chicken soup with some dumplin'-type-things. Looks and smells amazing, but I had to grate corn which was just... Weird.

Doing some scorpion pepper chili. I actually looked up some of the national chili competition winning recipes and added some ingredients I don't usually add. Pretty good but honestly, I think I make better chili on my own :)
 
When I'm able to eat it, I have an Indian casserole (that I learned from the Cree Indian tribe on their reservation in Montana years and years ago) that has 2 kinds of fresh squash, onions, cheese, various spices, just a touch of tomato paste.... delicious especially in the winter.
 
I'm trying to branch out with different kinds of squash, Sandy. Made Butternut Squash soup today that turned out well. Also thinking about making a chili with chicken and the rest of the butternut squash later this week. We'll see.
 
Let me know how the soup turns out.... and the recipe.... soup is about all I can eat right now ;)
 
Tonight it is whatever the dining hall is fixing and delivering. I need to go online and see the choices and make a decision. No chance it would be lobster - pretty sure of that.
 
Took the day off - was going to go to former Marine buddy of mine's retirement ceremony, but couldn't get it together to make the trip. Doing a 'BRITU' (Best Ribs in the Universe) cook today. Local pork loin ribs, membrane removed, rubbed down with a homemade rub, put on the Weber Bullet smoker with some apple chips/charcoal for 3 hours. Will pull off, put in a foil pouch and smother with homemade BBQ sauce and drizzle with my own honey, and cook another 2 hours until they are falling off the bone. Shooting for 9pm dinner with the wife who worked 12 hours today. Made enough for her to take lunch to work tomorrow for her peeps. Because that's how I roll.

If you want recipe/instructions, these are the best ribs you've ever eaten. Trust me.
 
Making one of my favorites, highly recommended if you haven't made it before, Chicken Tortilla Soup. I rarely follow recipes, but given I'd never made anything like it before, found an awesome recipe HERE. I love recipes that celebrate the dish itself, and don't just list a bunch of ingredients and the cooking steps required. This is one of those.

If you are entertaining folks, this is a perfect recipe. You can make the soup itself well ahead of time, heat it up, and then let your guests dish it up and add whatever additions they desire at the table.

Really a wonderful meal.
 
Shrimp Burgers for lunch. Ground up 1/3 lb shrimp in food processor with some mayo and spices for the binder, then added 2/3 lb whole shrimp and pulsed a few times so they were cut up a little smaller. Made into patties, coated with panko, fried with a tbsp of oil for 5 minutes on each side. Add some homemade tarter sauce, Bibb lettuce and you've got a great lunch. Served with roasted potato wedges on the side.
 
Shepherd's Pie with homemade ground beef, and Broccoli-Cheddar soup for dinner. Good stuffs.
 
Leftover Shepherd's Pie for dinner. And because that doesn't have enough potatoes, I made twice baked potatoes with Boursin (kinda like cream cheese with herbs, totally delicious). Gonna be good!

Red beans and rice for dinner tonight. Probably one of my top five favorite meals.

Tomorrow is gonna be pinto beans and cornbread! Anyone else have this as a meal or just me?
