Birth of a Beer...

That sounds delicious. But I'm going to go with pure top-shelf tequila with this one...not sure how a bourbon backdrop would mesh...
 
Brewing today - I may do both the double IPA Hopquila AND a lager I've been delaying doing... I'm the only one at home today so it's a great day to brew and watch football without any complaints...
 
After two brewing sessions today, here's what I have on hand at my house:

5 gallons Mead
5 gallons Imperial Stout
5 gallons Winter Warmer
5 gallons Hopquila DIPA
5 gallons Bavarian Helles

That's just totally out of hand - even for me :) Only one of them is ready to drink, the Winter Warmer just went into keg under CO2. The others are months or close to a year from being ready.
 
Just don't drink to much at once. I'd hate to see you get bombed and have to throw all that out!!! ;)

That only happens if I drink bourbon :) Besides - if I were drinking any of it, I wouldn't have 25 gallons in my closet! I'm better at making it than getting rid of it.

sam adams winter lager has a weird cheery cough syrup taste to it. once i pointed it out to my wife she picked up on it too. i don't like it. i used to love it, but now all i taste is cherry cough syrup every sip.

so - starter yeast on stir plate = win. it's almost already done fermenting. it's incredible how much faster it started and finished.

i'm also doing a 3 stage process now. as soon as the airlock gets down to 1-5 bubbles per minute i'm racking it off the trub to new carboy. then to a conditioning carboy once primary fermentation has completed.
 
Thought I was going to have to dump my first carboy ever tonight. As mentioned, did a Bavarian Helles lager all-grain last Sunday. I didn't look closely at the yeast I had bought, and got lazy and didn't do a starter. Turned out the yeast was more than a year old. As of Tuesday zero activity. I stopped by the local homebrew shop and again, all they had was year old german lager yeast. They were almost giving it away, so I bought 4 tubes of it. Pulled the helles out of the fridge and added it. 2 days later, still nothing. I was going to dump it and came home tonight and it was fermenting so hard it was literally pushing handfulls of trub and yeast through the airlock. Cleaned it up, and it's back in the fridge at 50 degrees. It'll be interesting to see how it turns out after 2-3 months of lagering. Never had a beer take 4 days to start fermenting and that's probably the last time I do a big beer or lager without a starter.
 
Got a Winter Warmer on keg. It really needs another week on CO2 but sampled a couple glasses last night. Pretty damn good. In a month it would be perfect. I am thinking it won't survive Super Bowl weekend though - and I'm not even sure I'm having anyone over :)
 
I have that same problem Boone. I taste it and say - man, this would be so good in a month. And then i drink it all.

So I took a big step on Sunday...I registered to enter two of my brews in the National Homebrew Competition. This doesn't mean I will get to enter them as they are limiting the number of entrants and entries this year. I will find out sometime next week if I get to submit my beer.
 
Well, if they don't select you, just send a 6 pack to me. I'll enter it in Ax's Homebrew Competition.

With the current number of entries, I can guarantee you a 1st place finish. :)

Bottled an Imperial Stout today using Grolsch-style bottles, expect it to be ready next Christmas. It's a 'big' beer, something like 25 lbs of grain went into it. I snuck a taste today and it already tastes amazing. Moved my Double IPA 'Hopquila' to secondary today with some more Mozaic hops added. In a week or so will add 5-8 oz. of the best Tequila I can find. I'm anxious to try that one in a month or two.

This is a super rare, bourbon-barrel aged imperial stout. They put it or in very limited release once a year. My second favorite type of beer ever!!

Bob, there are around 940 cases brewed each year, so around 11K bottles. That's George T. Stagg levels!!
