What's for Dinner?

Feeling GOOD right now. Took a 3 lb Londonbroil, seared it in garlic infused grapeseed oil, then kept it in the pan, put it in the oven for 15 minutes until internal temp just below 135 degrees. Removed pan from oven, removed meat from pan, degalzed with a nice red wine, reduced by half, added cream and butter. Mix thoroughly. By this time, had thinly sliced the meat, then returned to sauce to finish cooking briefly (also essentially reheated).

Em made her homemade Blue Cheese dressing with salad, then had veggies on the side, and shared a nice bottle of red wine. Feeling really good right now. REALLY good.

I'm not as think as you drunk I am, either.
 
Made my mom's beef stew recipe...best damn stew I've ever had, and one of the simplest things I cook. Damn its good.
 
The cafeteria here can deliver if needed (eh, I'll never use that option. :)) or I can eat at the dining hall. Have the option to bring it back here too. Anyway, they had mini-burgers and sweet potato fries tonight - dang tasty.

Most of the time I will make my own meals, but it is nice to have this service.
 
Going simple...shredded chicken tacos with corn and rice for sides.
 
Got some frozen venison steaks and elk tenderloin I'm going to cube and do a game chili with. Cornbread on the side.
 
In honor of BB's return, and his new city, I made BBQ tonight. And picked the coldest damned day of the year to do it too. Yay. I smoked a pork butt for 10 hours with a nice Memphis rub using applewood.

It...was...incredibly good.
 
Sounds great! Awesome timing too. They are serving BBQ in the cafeteria tonight and I just sampled it. Very good. It is served with baked beans, brown rice, large salad, and cornbread.

Last night I had chicken thighs rubbed with a mix of brown spicy mustard, olive oil, lemon zest, salt, thyme, and italian seasoning and thrown on the grill. Served over black beans and rice with a "sauce" of chicken stock, olive oil, garlic, brown mustard, and lemon juice which was heated and mixed with a touch of flour as a thickener.

I don't want to make you feel old or anything, but this sounds a lot like my grandmother's new place :)

She rarely cooks anymore because the food in their "cafeteria" is so good. She does bake from time to time, though, and makes breakfast for dinner once in a while.
 
We have been trying our hand at homemade Shrimp Thai Red Curry.

here is the first batch that tasted incredible! (Very easy to make too!)

LOL, I will get right on that!

ingredients:
1 1/2 lb shrimp
2 small to med zucchini
1 red pepper
hand full of carrots
1 can lite coconut milk
2 tbl fish sauce
2 tsp red curry paste
olive oil
2 cloves garlic
basil to taste
pepper to taste
ginger
Heat large skillet with olive oil add ginger and garlic, cook for two mins. add shrimp and fish sauce. I added pepper and basil at this time. when shrimp r done add all the veggies and curry paste, when veggies r cooked to desired texture add coconut milk when it starts to bubble turn down heat and simmer for a few mins more and then ready to eat.
 
hold the zucchini (for me anyways) and that looks amazing!

my girl has been sneaking squash in our dinners..all in this "get mike to eat vegetables" kick..lol so far pumpkin squash is winning.

You could probably get away with just about any crunchy style veggie, I am going to add in water chestnuts next time too I think.

I love the recipe because Im sort of carb free these days and there are few in this dish. Leftovers are awesome too!
 
Mike, try this Acorn squash recipe:
Half & seed an acorn squash.
Put one tablespoon of butter & one tablespoon of real maple syrup in the middle, then sprinkle with fresh Rosemary & sage.
Bake at 375 for an hour, basting with the syrup/butter mixture every 15 minutes.
 
We made cajun honey butter pork tenderloin last night. Holy balls was it amazing. And while its cooking, it smells like candy. "Grilled" up a squash medley (on a grill pan) on the side, along with a sweet potato.
