What's for Dinner?

Did a 2+ lb beef sirloin tip roast on the recteq last night. Just a simple Brazilian steakhouse rub and a little bbq sauce at the finish. Pretty good! I have never smoked or grilled a tip roast, and I was surprised at how tender and flavorful it was with so basic a prep. Will definitely put into the rotation. Took less than 90 minutes from start to finish.

Months ago we learned of a place on the eastern shore that sells fresh seafood. I've only had a real scallop, the kind in the shell not the kind scooped into a container, once. It was fantastic, think the difference between a garden tomato in August and a store bought in February. But those were sea scallops and I ordered bay scallops.

I can't seem to find a recipe for in shell bay scallops, just sea scallops or bay scallops already out of the shell. The store is closed today. With shipping the cost was laughable for a bag of tiny scallops. But I'm committed. I think I'll just steam them like mussels.

We had spaghetti a few nights ago with red wine. But the hit was the garlic bread. My Mom's recipe but she used to make it under the broiler, and I found it's easier and better to toast on a good cast aluminum griddle. The bread is from HT, it's called Gran Reserva Baguette. It's got a really nice flavor. Butter, salt, garlic, paprika, oregano, and parsley. Tent loosely with foil to keep bread moist. Turns out light with a nice crunch. Really really really good.

After making a pot of spaghetti and eating off of that for several day I also mixed in a pizza. Friends want to go to dinner and Italian was the choice. Oh well.
 
Somebody mentioned scallops earlier so I thought I would share one way we eat them. We had these a few weeks ago. I do the scallops, and the wife handles the veggies.

Bacon wrapped scallops is the other way we eat them. I'll share those pics later.

That was me. I got a bag of bay scallops and cooked them like mussels. They were better than mussels but not worth the cost or effort. I'll stick to sea scallops from now on, your dish looks awesome.

I prefer sea scallops, dry if I can find them. If wet scallops are on sale, I'll still buy them & soak in cold water, some lemon juice and a little salt. I dry them off really, really well, then sear 'em in ghee on a screaming hot pan for a couple minutes.... Mrs. Skinsfan doesn't care for scallops, so I get 'em all!
 
I'm not sure the difference between wet and dry scallops. We get ours from Costco so no idea which type Costco sells or which type is preferred.
 
I dunno. I'm new here! I am on a desktop. Windows. I click on Attach files, then select the files from my hard drive, and they show themselves on the page, but not posted yet. If I just hit save, then they get posted huge automatically at the end of the post. But if I click on the "Insert" word on the small photo, then I have a choice of putting the photo where the cursor is located, and also as either a thumbnail or as a full image. :cool:

Wet scallops are treated with a solution of water and some long-ass chemical name to retain their weight & appearance. Dry scallops aren't treated with anything and taste much better. There's a big difference in flavor and texture. You can remediate that, somewhat, by soaking them in cold water, lemon juice and a little salt, (Google the ratios).
