What's for Dinner?

Is anyone else a big fan of Capital City Mambo Sauce? I had heard about it on ES by many members years ago...then one day I was driving by my local KFC and it was on the sign...I damn near wrecked myself trying to get over into the right hand lane to make the turn in...and I was absolutely hooked. (They sell the squeeze bottles in grocery stores here now). While I don't eat wings, I put it on chicken breasts that I cook on the Foreman, pork chops, etc.
That shit is magic.

And Popeyes is just it...the chicken sandwich, fish sandwich, shrimp tackle box are all the shit. I know their biscuits are frozen, but they TASTE like a biscuit should. The KFC moment was just because of the CC Mambo sauce sign...and I prefer original recipe because it reminds me of the Gino's franchise up north when I was a kid.

I'm weird, I know...
 
Made some Brunswick Stew a month or so ago and did such a large batch (I am an incurable cooker of more food than 2 of us could possibly eat!), I froze two additional meals worth of it. Threw it in the Instapot on slow cook. Saltines with Brunswick is a good comfort food and I need some comfort.
 
Just got back from Wild Seafood in Jessup. They had fresh shad which non-FB Anne loves from her childhood up in New England, so we bought two of those fishes, fileted, and I had to get a half dozen of these bad boys pictured below. So yeah, it'll be fresh seafood tonight.

Those are two full sized dinner plates above. Six oysters were 4 lbs.

Edit: The shad was really really really good.

Really happy with this cook last night. Fresh wings from Boarman's. First wing cook of the year. Using the cracked lid method with the bottom damper wide open and the top damper fully closed which enables a complete cook of the wings top to bottom without the need to flip them. Frank's RedHot sauce original mixed with melted butter.

I bought a Vortex for the grill today, ($26.00 on clearance at Wal-Mart 😀), and one of its claims to fame is that you can crank out some really crispy wings with it.
It's just a cone shaped piece of SS, but people swear by it, especially for wings.
We'll see....

Yeah, I bought one a while back, and yes, it does produce some serious heat! I heard the heat can actually damage your grate, so I use the grate that has a hole in the middle. Bottom line, it will fry up them wings real nice, you just gotta turn them half way done.
 
Wife had to work today. I am stir-crazy as hell so I think I might mask up and make a grocery run. I've never done fried shrimp at home for whatever reason, but think I'll do some for dinner tonight.
 
Shrimp and risotto last night. Shrimp is my favorite protein. If you don’t already use it, pick up some panko. 😋

Yup. To be economical, I buy the bags of frozen cooked, deveined...that way I only thaw as many as I need for a meal. I add 'em with broccoli to my lucky game day halftime ramen. Easy peasy.
 
After USMC boot camp, I was held back at Parris Island in SC for about 6 months and that happened to intersect with my brother who was a Lt at the time coming there as a series commander. On the weekends, we would hit some great salt marsh spots and learned how to cast net for shrimp. It was us and 20 Korean ladies out there. We learned a lot from them. They would throw out handfuls of dried cat food, wait a few minutes and then cast on top of it. You could literally haul in a couple lbs of shrimp with every cast. We would come home and steam them and eat so much we were literally almost sick. Best damned shrimp I've ever had.

One fun fact about live shrimp I never realized. When they are caught, they will flick their bodies and drive sharp little spikes into your hands and arms. It can be a little bit of a bloody affair catching them. Who knew?

Yeah....I read that too.....I'll take that chance for a single cook then start shopping for one of those grates with the hole. Do you remember how long you cook 'em? I'm just doing something like 5 flats and 5 drumettes.
 
A screaming hot vortex with wings around in a circle should take about 40 minutes. :D
 
If you're going to use something called a 'Vortex', would it be better to arrange your wings in a Pentagram?
