What's for Dinner?

I picked up a pack spinach & herb wraps the other day at Lidl. We had leftover air-fried chicken tenders in the fridge and some Romaine lettuce. I cooked a few slices of bacon and made a Buffalo chicken wrap for Mrs. Skinsfan & a Sesame chicken wrap for myself.

Probably about 10-15 minutes depending on traffic...

I got it as a gift when I was in my 20's. It was a great way to start out in cooking for myself. This page is pretty damned messy as this is one of my go-to dishes for company. Perfect for today as I make it ahead of time and then just heat and serve at halftime.

Except there was this one year. You brown the chicken first, I was short so I started browning more. Then for reasons I can not explain I left the house to run errands. With the chicken still browning. I'm not kidding, the wife came home and saved the day but she remained pissed the entire game. And for good reason. I have no idea why I did that, and that was before I got older and more forgetful.

Was the game in New Orleans that year? Maybe in honor of the game you were shooting for blackened over browned?

We actually don't have that one - we have a 50 year old Betty Crocker cookbook and a really old Better Homes and Garden cookbook.
 
Those are all classics. I remember my Mom had those. I might to if I dig through the stacks.
 
My SB meal today will be the same as last year as it's always well received. I make a really good chicken caccittori I got out of the good old Joy of Cooking years ago. The key is to serve it with toasted sliced almonds on top.

I ran across a recipe *supposedly* based on the Joy of Cooking one. Basic ingredients listed are the chicken, onion, garlic, canned tomatoes, sage, rosemary, bay leaf, sweet pepper, green or black olives, fresh mushrooms, red or white wine, chicken stock.

How does that line up with your recipe? Do you serve over rice, mashed potatoes, or alone?

I've got the BHG in the kitchen, found a whole box full of other ones that I haven't seen in years. 🤣

I've got a Better Homes cookbook as well, meals on a budget. For a while I made this marinated grilled chuck roast, ketchup, chili powder and onion were the main marinade ingredients. Made it so often it became known as Dave Meat. Come to think of it I gotta maket that again soon, it's really good.
 
I got Joy of Cooking, Betty Crocker, and my personal favorite - Cooking with the 'Skins - 300 pages of wonderful recipes from the wives of the coaches and players of the 1980s. Complete with random Redskins trivia on every page. Printed in 1987. My favorite is the Lobster Stuffed Tenderloin by Joe and Brenda Bugel. I would use butter though.

Wow! There is some cosmic **** goin' on between you and I. That's for sure. I had to show my wife. She agrees something weird is going on. And I told her about all your Thermoworks gadgets - just like mine. And all the probes, and how to manage them. And the Weber site connection. And we both have wives that like to cook but neither of them are on social media. And we both like coffee enough to have a conversation about it with strangers in a BBQ forum. And the ES connection. And the pre-tailgate tailgate connection. And both Dad's being career guys in the Navy. And both Dad's stationed in Norfolk aboard ships in the 60s. Friggin' weird!

I know, right? When the weather breaks we can catch up at one of those pit beef places.......and speaking of ES....Pez, Huly Frannie, Ben, (not sure if you remember him), and I are good friends and we try to do as much as we can with them. We'll be at Pez & Huly's for the Super Bowl and I'll tell them you said hello.
 
Yeah of course I remember Ben. Great, thanks! I know them all fairly well from going to 15 ES draft day tailgates in a row... Pez & Huly would get their first with the pig and the box, and Huly's parents too. And I was usually second. Great time!
