What's for Dinner?

I have made cauliflower crust before which works amazingly well and tastes great but it is such a pain in the ass to make I just can’t. I have also made a crust with canned chicken and some other ingredients which wasn’t bad, but it is pretty ‘strong’ and the taste overwhelms the pizza.

I can make a decent pizza dough but I have never gotten all the way there. One solution is if you have a local pizza place whose crust you love, ask them if they sell dough - a lot of smaller pizza places do. You can also order great pizza dough from places famous for it online. It will come frozen and keeps for years.
 
My new hobby of homemade pizza has been a fail. I can never get the fresh dough to roll out. I dusted with flour, used a rolling pin and it always boings back into the thick shape. If I try to stretch it with my hands it tears. The pre-made crusts at the store result in a pizza resembling Tombstone.

But I just stumbled on a recipe where you mix cabbage with egg, heat in a skillet to create a crust, and then add sauce, cheese, toppings and cover in skillet to melt the cheese. To my surprise the wife wants me to try it.
Yeah I've had a tough time with pizza as well. I saw on youtube where you can curl the edges over your somewhat squared wood pizza peel and that worked somewhat, but was still very frustrating and I finally gave up. Life's too short.

Same. Home made pizza my White Whale. I even have a hard time working with pre-made dough, which people rave about. I have a steel peel, and have tried scattering corn meal on it, which helped, but I still have a hard time. I guess I just don't have the knack for it.

Baking in general is a bitch for me. I've successfully made a loaf of bread in Dutch oven one time. Once. Complete fail on the 2nd attempt. I made buttermilk biscuits for the first time a couple weeks ago and they turned out so good, that I'm tempted to go out on top and not try them again. Fortunately, Non FB Fran is a fantastic baker. I think that's because she's good with the structure...you know...measured ingredients and what-not. My cooking style is similar to my Mom's....it's a lot free-wheeling....a pinch here, a splash there and I can turn out some great meals. I don't have the patience, or desire, or whatever it is, that it takes to be good at baking...
 
Non FB Anne is also good at baking and just about everything else. I'm the meat guy ;)
 
Yeah, baking is too "precise". I cook. It's much more forgiving.
I'm doing a chili cook-off in March with a couple buddies.

"I have also made a crust with canned chicken and some other ingredients" is a sentence I never anticipated ever reading. First off WTF is canned chicken and how do you make a pizza crust out of it?

I have no problem finding fresh dough. My problem, and apparently I'm not alone, is I can't get it to spread out.

Ummm. It’s chicken chunked up. In a can. You can find it in the tuna section.

If I recall, you basically squeeze all of the liquid out if it, shred it, mix with some eggs, and fresh herbs, annd some parmesan and then roll it out. You have to pre-bake it for like 10 minutes, then pull it out, let it cool, and use it as your pizza pie crust as usual. It stiffens up and it’s not bad. I believe it’s a keto recipe.

It’s actually not bad and if you are doing keto, there aren’t many pizza crust options. I just mentioned it, not advocating for it lol…

If you're given up on making pizza crust then you might want to try the stoner pizza I made when I was in highschool. Everybody seemed to like it but they were also pretty baked. Haha.

It's simple.

All you need is English muffins, spaghetti sauce, cheese.

You can even add some pepperoni or bacon, whatever else is in the fridge.

One of my friends even liked it with sardines 🤮

SkinsFTW for some reason when I tried to quote your post I get an error message. This has happened before and not sure why but this is drected at you.

When I was a kid my friend made this with a slice of wonder, ketchup and cheddar cheese. I still make them once and a while, now I mix in some oregano and garlic powder.

As for my pizza made with a cabbage crust, well...... First issue is I could not get it to hold together. The recipe called for sliced cabbage cooked for a few minutes to release the water and then mix in egg. I could not get it all mixed before the egg started to set. when I tried to turn it half of it fell apart. If I do it again I'll remove from pan and mix it all in a bowl first, and cut up the cabbage more instead of slices.

But the part that was saved was eaten for dinner, with a knife and fork. My first bite was disappointing. This does NOT taste like a pizza. Although it didn't really taste like cabbage the lack of a real crust was instantly apparent. As I continued to eat it I started to enjoy it, it is what it is. But you can't fool my body. An hour and a half later, just as if I had a salad for dinner, I was hungry. Should have mixed in some canned chicken I guess.
 
Darrell Green Fan - it's a known glitch with Xenforo - if you 'quote' someone and they have emoji's in what you are quoting, you will get an 'Oops' error. I am staying indoors with my cooking today. Going to do something I rarely make, some red beans and rice (w/pickled pork if I can find it). Going to brine some pork chops and fry them to go with it.
