"kinda" meatless Monday...

Baking a potato *I only use my big oven in the winter*
Gonna throw some canned Hormel chili with beans in with some shredded cheddar, sour cream, and bacon
Tryin' to finish off the leftover broc casserole...I used to make one on Thanksgiving and my husband would have it gone and I'd be soaking the casserole dish before the night was over :LOL:
 
I reheated my chopped pork butt last night sous-vide method.

I went a little overboard on an Omaha Steaks order (my neighbor & I are sharing it...I won't be eating out for a while :cool: ). It arrives tomorrow & to say I'm excited is an understatement!!
 
Comfort food.
One of my sister-in-law's customers owns a restaurant and gave her some tomatoes & red peppers that they couldn't use. Mrs Skinsfan made tomato soup with it. I tossed in some crumbled goat cheese & croutons. It really hit the spot last night, especially after spending so much time outside clearing walks...

Speaking of sous-vide method, I just ordered one of these clips from Walmart to hold my probe close to the pots side. Currently, I let my probe dangle the side which means it moves around all the time.

I had an unusual and really good risotto last night:
SHORT RIB RISOTTO
Short ribs, leeks, bell peppers & arborio rice in a swiss cheese herb cream sauce

The meat was melt in your mouth tender and the cream sauce was loaded with fresh herbs
 
Sometimes I'll have a couple unrelated ingredients and I will seek out a way to use both of them in a dish. This sometimes results in discovering cool new flavor combos.

I bought some New York Strip steaks last week. I was at an Asian grocery last month and randomly bought some fish sauce and shrimp paste. Hmmm?

Didn't have a couple ingredients and we're snowed in... subbed in onion powder for the scallions, some powdered ginger for the fresh...

We'll see how it comes out later.
 
Boone my son uses fish sauce a lot for umami. He doesn't like mushrooms or anchovies but he likes fish sauce
 
Yeah, I'm a big fan of fish sauce - but I'm a snob. Gotta be Red Boat or something of that grade. The stuff they sell at most groceries is not up to par.
 
Heating up some Manhattan clam chowder I made a few months ago and froze. I have discovered that with a 1/2 cup of water added to my Instant Pot, it's as simple as throwing frozen soup into the pot and pressure cooking for 10-15 minutes. When I make soup now of any kind, I do a big ol' batch of it so I can freeze it. Makes for a super easy and quick meal during the week.

I do the same with soup and sometimes chili, make large quantities!
 
I did a couple types of wings for dinner yesterday and also made some homemade Mac and Cheese. Funny thing about mac and cheese - I have never made a version of it where I thought it was superior to something like boxed Kraft mac and cheese. I have tried all kinds of recipes. They were all reasonably good. But I would still prefer something out of the box like Kraft in terms of taste.

It's like growing your own celery. Why do it. Just buy the damned stuff.
 
Lamb chops & curry rice. Simple marinade avocado oil, lemon juice, lemon zest, fresh minced rosemary, oregano, smoked paprika, lots of minced garlic, pinch of salt and black pepper.
Seared in a cast iron skillet.
I mixed beef broth, curry powder & a few drops of sesame in the liquid and cooked it in the rice cooker.

Yeah...lamb is one of my favorites.Mrs Skinsfan doesn't eat it, so I rarely buy it. I was at Costco the other day and put a pack in the cart. I vac-sealed them in meal-sized portions an froze them.
My eyes were bigger than my stomach..two chops is plenty, so I ate the other one for lunch today.
Costco has high quality lamb. They have fantastic rack of lamb, but its just me eating it. I prefer grilling them, but they're pretty damn good cooked on the stove too.
 
I love Shish kebab … cheesed out and bought some pre-packaged beef and chicken skewers and will grill tonight.
I'm doing lobster tails & asparagus on the grill tonight. We made up my Grandma's
Potato casserole last night & we'll pop it in the oven tonight. It's my wife's favorite potato dish. We saute the leftovers and serve them with sunny-side up eggs for breakfast.
My grandma made these as long as I can remember.
