What's for Dinner?

Paper thin escallopine of chicken breast, quickly sauteed, 2 each
Each escallopine topped with 2 pieces of thick cut bacon and xsharp cheddar. Finished in the oven
Toasted sourdough
Stubbs bbq sauce on one slice and Hellmans on the other slice
Bibb lettuce, gorgeous center cut summer tomato slices, and paper thin sliced red onion

Sammich! 😍

Didn't feel like heating up the kitchen or,(gasp!!), firing up the grill. Italian sausage & peppers.

This was supper last night.

I have some left over pulled pork, of course, so DLSF made some twice-baked potatoes.

She made four, so we ended up with eight halves.

All of these have pulled pork mixed in them.

Otherwise, the one on the left is a classic twice baked potato - note the bacon bits. Cheddar cheese. Chives.

The second one is a roasted poblano pepper twice baked potato. Poblano is from the garden.

The third one is a Cubano twice baked potato, which means it includes a dash of mustard, Swiss cheese, smoked ham, and pickles.

I had a half of a Cubano half and half of a Poblano half.

Damn delicious.

I have a torta shop nearby that makes the best Cubano sammiches ever. They put a fried egg on 'em, and I add pineapple. Easily shareable, damn things are huge.
 
Made a beef rib club sandwich last night which is to say, slice up that left over smoked beef ribs, fry it in the pan, slather some Hellman's on a toasted Amoroso club roll, add some lettuce and a slice of seasoned tomato, melt some provolone cheese on the heating meat, when it melts, layer the meat on the club roll. Crown. Excellent. Too bad I forgot to take a pic of the sandwich but check this marbling out on the beef rib slices. Look at that smoky bark. Seriously.

Between myself and my dog, we never have any beef ribs left over for this.
 
Twice baked potatoes are a surprisingly good vessel for sandwich homages. I kind of want to make a Reuben one with swiss and pastrami and kraut. Maybe rye bread crumbs. Or a French Dip potato with provolone, top round, horseradish, and au jus gravy.

What else? I think it’s a food truck idea in the making.

We have a lot going on this weekend and I've already made Cajun shrimp & have pit beef on the smoker for our post-tubing picnic tomorrow so it's a lazy dinner today.
Slow cooker baby backs. It couldn't be any easier. Peel the membrane, cut it in sections, sprinkle rub, pour over BBQ sauce, low for 7 hrs, and put them under the broiler until the sauce is caramelized. Easy peasy. Gonna bake a sweet potato in the air fryer & have Non-FB Fran's cucumber salad on the side.

I hate bell peppers. Can't stand them. I can smell them a mile away. I can feel them. I can sense them. Their presence offends me.

I married a woman from Louisiana. They put the buggers in everything. Almost ended our relationship before it got started.

Somehow she manages to put up with me and my absolute distaste for those awful smelling and tasting vegetables. YUCK.

(This is about the only food I really and truly detest. But man, I REALLY hate them.)

My friend that I spend most dinners with told me "I'll eat anything".
Turns out, he hates mushrooms and onions...and I put both in damn near everything. Makes cooking a challenge, I have to separate things, but I'm adapting.

I know how you feel.
Mrs. Skinsfan is the pickiest eater on the planet, and maybe the universe. I blame her Mom who hit her & her sisters with a barrage of "you don't like that" for almost any food that wasn't your standard meat & potato dish. Aside from MD Crab soup, my mother-in-law was a lousy cook. My siblings and I were raised just the opposite, ("you know you'll like that"), and we would try anything. It doesn't hurt that my Mom is an amazing cook who encouraged to try all kinds of food. In addition to being a picky eater she'll only eat well done, (and I mean well done),meat and is all about the texture, (she doesn't like mushrooms either), and is a very visual. Menus with pictures were created for people like her :rolleyes:. Truth be told, I think it's made me a better cook....
