What's for Dinner?

I’ve been on a mission to find the best Po Boy sandwich in Nawlins. Yesterday was a shrimp @ Johnny’s and today was a wet roast beef @ Parkway Bakery & Tavern. Tomorrow is Killer Po Boys (pronounced Killa here.)
Joey K's in the Garden district is the best....
 
I reached the point that if the bread is on point and the protein, like shrimp or oysters, is fresh then they are basically all the same.

Broiled scampi and Italian bread

Compound butter made with a ton of garlic, butter, white wine, lemon juice and chopped parsley. Hand whip it all together and cook the shrimp and butter as hot and as quick as possible under the broiler. Lots of toast for dipping

Pan-fried so they get good & kinda burnt, like on the grill. Canned chili (spiced up to taste), red onions, mustard, melted deluxe white American cheese.
Ketchup is sacrilegious on a dawg, btw.

I forgot the slaw, so I'll have to make another round tomorrow night ;)
Since they're so damn messy and have to be eaten with a fork anyway, might as well pile everything on! (Pimento cheese is also a fab option, credit to The Varsity, famous greasy spoon in ATL kinda like The Beacon in Spartanburg, SC.)
 
I love The Pioneer Woman, (I can't remember her name). Very comforting stuff.

I made tuna salad (mom's recipe) for a tuna melt...I only melted the Swiss on the sub roll.
A can of tuna, 2 hard boiled eggs, diced dill pickles (I use Claussen minis), mayo. I add onions because I like the bite. There's another Swiss slice on the bottom.

For breakfast...
I saute shrooms, onions and peppers then pour a well-beaten egg in. In a warm flour tortilla with melted white American and taco bell mild sauce.

Going to do an old favorite for dinner tonight, Chicken Tortilla Soup. My wife really likes this one, and it definitely falls into the 'comfort food' category. I use a Pioneer Woman recipe I stumbled onto a long time ago.
Gonna look for some kind of chicken appetizer to go with it.
I don't know what it is but every time I make a soup or chili, and I make a really good chili, after 2 or maybe 3 servings I'm done and we have half a pot left. I don't believe soup or chili freezes all that well from my experience. I made a really interesting thing called African Peanut Soup. PIcture if you will peanut butter soup with garbanzo beans with a little chicken and some greens. I brought it to a dinner party and it was big hit despite it not going at all with the Italian menu the host served. And it did freeze well but it was really rich and I grew tired of it quickly. But I may try it again and I'll make a half a batch.

You know why it's just me...I make half-batches of everything now. We got the very first edition FoodSaver, and it's still serving me well. The DVD tells you how to freeze soupy stuff.

Yeah I have to do that too but with some reciptes it's hard as you end up throwing away half a can of tomatoes or a big stalk of lemon grass or whatever.

So Cliff Notes on how to freeze soup? I put it in a freezer bag and remove as much of the air as I can.
 
I usually just use the leftover plastic containers that I get when I get Chinese takeout for freezing leftovers haha. Or the cheap ones from the grocery store but they are basically the same thing.
