What's for Dinner?

I live in a nice two BR apt. here in Miami so I can't smoke. :( We do have grills at our pool but it's not the same. My girl is in the DR finishing her medical degree so papi is solo.

I ordered some fresh large stone crab claws and I'm waiting on their delivery. Making some fresh Chesapeake Remoulade for later while watching the Georgia Florida game.

Got some nice Arturo Fuente Don Carlos #2s for later. Drinking Titos with homemade watermelon juice with lime.
 
Dinner last night. Finished up the last of the venison.
For lunch today, I sliced the leftovers into thin slices and piled them onto a brioche roll with horseradish & mayo & a little BBQ sauce.
I have a little left that I'm gonna cube up and add to some chili when I heat it up for dinner tonight.
Those are inside loins, the tendernest cut on a deer...

We had some great marinated ribeyes and baked potatoes here tonight. Doing a couple kinds of wings for the game tomorrow.
 
Normally, I'm am serious about game day food, but since I unfortunately still work full-time, Thursday night games are a challenge. My wife and I are both nurses and she's working a 12 hr shift today. So stopped and bought some green peppers to stuff. Inexpensive, tasty, and easy, some ground beef, canned tomatoes, onion, garlic, taco seasoning, and rice. It's whats for dinner :)

Pre-chasing it down with some Sierra Nevada Juicy Little Thing IPA (not really my top choice, got it for my son and his girlfriend and they forgot to take it with them - but certainly drinkable).

What's for Dinner guys?
 
I was always told I was a good cook and I enjoyed it. Now in retirement I just don't feel like it anymore with the exception of grilling. So even before the pandemic I have been getting carryout for dinner 3-5 nights a week. Now when I do cook I look at all the time to shop, cook and most importantly clean after the meal I remember how easy carryout was the night before.

But it's obviously expensive. So I looked at those prepared meal delivery services. I found they too are expensive, take up a lot of freezer space and you have to commit for a year or whatever. So I'll start mixing in some of those prepared meals the are selling at the grocery store where you just throw it in the microwave. They are pretty good provided I don't overdue it and cost $7-$8.
 
I have always enjoyed cooking and menu planning/grocery shopping are highlights for me. I prepare the vast majority of dinners (sans late games). Though I pretty much clean as I cook, I never do the end of meal clean up. That is not my responsibility. 😉

Aren't air fryers the best? We had a cheap one for almost a year before we started using it and used it so much that we wore it out and bought a nicer one. The thighs are my favorite, but Mrs. Skinsfan won't eat 'em. How long did you marinate the chicken?
 
I almost always grill or smoke but yeah, air fryers are cool. They are so easy to use and are great especially for vegetables.
 
Grilled some salmon and topped with an avocado cream sauce made with

fresh avocado
olive oil
half and half
salt
pepper
lime juice
cilantro

Pretty damned good.
 
So being clueless, I had it in my head that this Thursday was Thanksgiving so bought a 12 lb turkey on Friday and thawed it out over the weekend.

So guess who's doing turkey, stuffing, greenbean casserole, and gravy tonight?

You’re not going to believe this, but…my wife told me last night that Thanksgiving is this Thursday. I said- no, it’s next week. She said- yes, it’s this week. 🤷🏻‍♂️ So today I bought all of the provisions. 🤪

I’m most embarrassed that as an NFL fan I did put two and two together. 😑
 
Made something I've only done once in the past for dinner last night - beef with fennel. I started with some really nice ribeyes each cut into 3 pieces, seasoned them with salt, pepper, and garlic powder and grilled them (got them really seared on the outside but still rare inside). Meanwhile, in an electric broiler I put sliced fennel (I slice the bulb and part of the stem/fern like you would an onion. I added some olive oil, minced garlic, lemon juice, and salt and pepper, and sauteed it until the fennel was a little limp (it takes awhile as fennel is sort of 'fibrous'). For the last 10 minutes, I added the steak pieces and a couple of cups of beef stock, brought it back to a simmer and put the lid on. Served over rice - it was amazing. Encourage you to try it if you've never done a dish like this.
 
I found 4 burgers on sale (1/3 lb ea.) the other day. Marinated one in just a little Worcestershire sauce for a while till it got close to room temp. Vac-sealed the rest. Put it on the Foreman with a little garlic powder & plenty of ground pepper, perfect medium. Sauteed some mushrooms, added raw red onions. Open-faced on lightly toasted Italian bread with provolone. Steak fries (baked) and veggies. I like 57 & Grey Poop on the side for dipping.

I’ve been on a mission to find the best Po Boy sandwich in Nawlins. Yesterday was a shrimp @ Johnny’s and today was a wet roast beef @ Parkway Bakery & Tavern. Tomorrow is Killer Po Boys (pronounced Killa here.)
