What's for Dinner?

Gator is terrible!

So, the Ms and I got in a little tat while she was cooking and I had to finish. While I was trying to get the boy his meal, I over cooked my NY Strip...I guess that's what I get! Ugh!
 
Gator is common on menus here in Florida.

Usually, it's a little too tough for my liking. But there are one or two places where it's an absolute must order.

If you do order it, I'd suggest having it blackened.

People who hate gator, usually hate it because they say it's tough. But I can tell you from experience - if it's prepared and cooked right, it isn't tough. The gumbo was friggin amazing, and I'm using the leftover liquid as a base for lobster bisque that I'll be making in a couple of days. The gator was super tender. The thing that makes it tough is laziness. It's full of soft cartilage and hard fat, but anyone who is patient enough and has enough skills with a knife, can remove the problem areas. I remove the problem areas, and it's awesome. Worth the time.

Had some gator kabobs in Yokohama couple of weeks back...tasty but like chewing a shoe some Japanese Ramen with long green onion and roast pork for diner..great if you like Ramen

Made a Turkey Meatloaf wrapped in bacon, a Mashed Rutabaga and Potato Gratin, Roasted Asparagus and a salad for dinner. And a Fresh Strawberry Mousse with Lemon Whipped Cream for dessert. Truly terrific, great summer dessert, nice and fresh.
 
Last night I smoked boneless skinless chicken breasts wrapped in bacon, using apple wood. It takes between 90-105 minutes at 225, depending on the size of the breasts.

Tonight I'm going to make an old fashioned American bbq for the aussie folks.

Bbq chicken
Corn on the cob wrapped in foil with butter, garlic salt, and pepper
Homemade potato salad

Should've made sun tea but didn't think about it when headed out the door this morning
 
Tonight, I'm doing chicken cordon bleu and greenbeans in a cast iron dutch oven on an open fire. Old school.
 
Dammit all you guys talking about gator and bacon makes me want bacon wrapped gator.

You have to say it like swamp people though....ga-dah
 
Made Steak au Poivre with Creamed Spinach and Melting Potatoes. Dynamite.

No wine though :( Did have bourbon in the cream sauce with the steak, so that kinda made up for it. A little.

Not really.
