What's for Dinner?

The dining hall closed by mid afternoon (weather), but offered to deliver evening meals early for anyone who requested it. Sunday evenings tend to feature leftovers from Sunday lunch. Today it was stuffed mushrooms with a twist. These two large mushrooms were made "pizza style" and were filled with a lot of toppings - looked like a fat cheese pizza with all those extras on it. Dang tasty too. A nice, large salad. Two blueberry parfaits with honey roasted oats. Got enough for lunch tomorrow.
 
Simmered Beef ribs in a cheap Merlot all afternoon, then had with a really nice local Touriga. Delightful dinner. Made mashed potatoes with cream cheese and butter, garlic bread, salad and a cauliflower gratin. The cauliflower was particularly good, the crushed red pepper really turned the heat up in the background, gave it a nice kick.

It's a new place in Austin, Stiles Switch BBQ & Brew. Checked it out on a whim because it made the Texas monthly top 50, and it's amazing. Having our rehearsal dinner here. :)

Sauteed Kale with onions, garlic and white wine vinegar. Sprinkled in some crispy bacon. Mmmmmmmm.

Making homemade Pho Noodle soup this afternoon. Not nearly involved as I thought it would be. Haven't added the noodles yet, but just tasted the broth and it is perfect, very similar to what I get in restaurants.

I effed up tonight. I made cannelloni with store bought manicotti shells. The filling was incredible, amazing. The sauce was great, but the overall dish suffered because I didn't take the time to make the pasta myself. A few sheets of fresh pasta would have knocked things out of the park.

Still enjoyed a nice Chardonnay and a Cauliflower gratin with it. Shortbread for dessert. Overall, very good.
 
Habanero steaks last night and baked potatoes. Reward for first bike ride of the season :)

And Goal - how did the chili cook-off go? You never mentioned or I missed it...
 
Forgot to post, thanks for the reminder. We had a chili cookoff at church a couple of weeks back, I got 2nd place. Used a Devil's Backbone Lager as the base and built it around stew beef, ground beef and some homemade sausage. It was great. The owner of a local restaurant we love was a judge and said she wanted my secret. Pretty cool. :)

Edit: oh, and Em made Jalapeno Cornbread and won first place in the cornbread contest. Her recipe is ridiculous.
 
Been cooking a lot more recently to help the wife out (also doing laundry and I've gone up a bra size. Should I be worried?) during a difficult year. Having a blast.

I made Boubon-Maple glazed salmon with skillet mac and cheese and braised kale for lunch today. It was fantastic. Had homemade brownies for dessert, and they were amazing.
 
Stole a wonderful soup recipe from our cook in Mexico, Miguel. He didn't share, just figured out most ingredients on my own.

Basically, you roast 8 Poblano peppers, peel, and puree. Add pureed pepper to a stockpot with a quart or so of chicken stock and equal amount of half-and-half. Squeeze juice of 2 limes into mix. Add a dash of cayenne pepper, some fresh ground pepper, a stick of butter, and salt to taste. Add in a cup of roasted corn, some sliced mushrooms, and after simmering for 20-30 minutes, add some in-shell shrimp and cook until they are done.

This is a really fantastic dish.
 
Well, I finally thawed the porterhouse I got on sale 2 weeks ago. Thing was on sale for $5.99 a pound so I got a 2 pound cut. Broiled it with salt, pepper and rosemary and sauteed some fresh kale.

I decided to use a 1/2 cup of water water and pour the olive oil in as the kale cooked. Normally I would just use olive oil, but burned it last time so I tried it this way...it was the best kale I've had in a while!

Great dinner for this guy tonight!
 
Brian, try it with chicken stock sometime. Imparts even more flavor, amazingly good with kale.

Not that water water isn't good, of course...
