What's for Dinner?

Homemade lasagna tonight...trying a different but very simple recipe tonight. If it's good, I'll share... Nice loaf of local bread to go along with it. All the work is done, just waiting for my daughter to get home from a weekend trip to pop it in the oven.

Made these last night - Fried Egg Chorizo Burgers. So delicious! We used turkey instead of beef to make them a little healthier (nevermind the Chorizo), and they were amazing. Highly recommended!

Holy **** that looks good. I'd have to find a work around for the chorizo though, or make my own without 47 pounds of salt in it. I'm thinking the farmer's market might have some fresh instead of salt cured. I'll have to check.

Bacon rotisserie chicken, cheddar mashed potatoes, giblet gravy. That's right, the South knows how to eat.

Made a stromboli with sausage, pepperoni, ham, mushrooms and black olives. Also a salad of spring greens, red onions and avocado with a balsamic vinaigrette.

Grilling some bleu cheese burgers with some panzanella on the side this evening.

Finished up a tour of the VA wine country today, the grandparents are filtering in with the kids. Making fried chicken and homemade buttermilk biscuits tonight with some blue cheese coleslaw. Sad the time with Em is done, but we now have an impressive wine collection that should last all of a couple of weeks...

This thread always gives me wonderful ideas. I'll probably never make ninety percent of them, but I love the ideas.

Grilled some burgers tonight. Grass-fed beef mixed w/ 1 egg and a mix of cumin, paprika, salt, pepper, garlic powder, and onion powder. Added some mild cheddar cheese and served with baked french fries covered in Tony Chachere's creole seasoning.

Brisket on the grill, just staring it's 3rd hour now. Potato salad in the fridge and beer chilling in the cooler...

BTW - my backyard smells better than your backyard. :)

Trying my hand at some homemade calzone tonight...

I did the impossible - duplicated my great grandmother's recipe for Sicilian spaghetti sauce, something my family has tried for decades.

I always make my own pasta and sauce like she did, but I never could quite get that extra flavor hers had. She had a few secret ingredients, but over the years figured them out. But she did something as the last step that she never let anyone see, and took it to her grave.

Today, something occurred to me. I remembered the times I asked for her secret, and she always said put two and two together. That **** has driven the family crazy for decades. But tonight, a light bulb went off.

I was thinking about what I missed all those years, and realized that every time she made spaghetti, she also made stuffed artichokes. She boiled the artichokes first, but I realized I never saw her dump the artichoke water. So I boiled some artichokes, and as soon as I smelled the water I knew I had it nailed. I poured some into the finished sauce and stirred it in, and sure enough I finally did it.

People that don't have a huge cooking family like this have no idea how fun but aggravating it is to accomplish something like this. After I let it cool, I immediately bagged up what I wasn't using and distributed it to some relatives. When they tasted it, their reactions were priceless. I think they thought I sold my soul for the recipe

They all asked me if I was disappointed to crack it, since the mystery is solved now......hell no, that **** has driven me nuts since childhood, I'm glad I don't have to guess anymore :D

......and I didn't give a single one of those bastards the solution to the puzzle ;)

Not seasonal, but requested by my daughter...beef stew. Some locally grown beef, onions, carrots, potatoes and spices. Turned out well.

Em and I went to Wade's Mill about 25 minutes from us a couple of weeks ago and bought some locally milled grits, so tonight I made Shrimp and Grits. Cooked the grits with half and half and milk, added some butter and cheddar cheese at the end; cooked up shrimp in some butter, cayenne pepper and paprika; then made a roux with the shrimp/butter mixture - added some flour and chicken stock, then added some cream, and finally about 4 ounces of grated smoked gouda. OMG.

Our oldest doesn't like grits and she asked for seconds.

Sauteed onions, peppers and garlic in some Olive Oil with mild italian sausage. Tossed in some penne.

Now as I prepare to eat dinner, I am jealous of Goal! Damn you Goal!

I had to have Italian from the quaint little joint that is new in town.

I had their creamy polenta with salsiccia with their home made marinara for starters.

My wife got their risotto primavera, she loved it!

I had their chicken riviera...breaded chicken breast stuffed with prosciutto and fresh mozz, topped with a drizzle of their home made marinara and mozz melted over it. Fantastic!

Not what I am having for dinner, but a friend posted what he had for dinner last night and I thought it looked sooooooooo good!
