What's for Dinner?

Doing a couple Boston butts on the smoker for pulled pork this evening. Rubbed them down last night and out them in the smoker at 10 p.m. last night. Using some apple wood for smoke. Will pull them off around 1 or 2 p.m. today, wrap in foil for a couple of hours and then pull. Will serve with a choice of eastern NC and western NC sauces and some homemade slaw.
 
Boone, if you remember snap a pic of the post smoking, that sounds fantastic!
 
Doing steaks and baked potatoes for dinner tonight. I am using one of my favorite recipes from a wonderful recipe book I got a couple of Christmases ago.



Cooking a spicy steak recipe, with ingredients (from memory) as follows:

1 can/bottle of Coca Cola
1/2 cup teriyaki sauce
1/2 cup soy sauce
Minced fresh garlic
1 tablespoon orange zest
1 teaspoon ground ginger
1 teaspoon fresh lemon juice
1 teaspoon fresh ground pepper
1 finely chopped Habanero pepper (with seeds)
1 tablespoon olive oil
1/4 teaspoon kosher salt

I'm using flatiron steaks but this marinade is unbelievably good. The book referenced is composed of favorite steak recipes from all over the US Marine Corps. A really cool little recipe book. That looks like an awesome marinade recipe. I love grilling and am always looking for new marinade recipes, so I might try it this week.

Funny enough, my parents have invited me to celebrate New Years dinner with them and we're having steak. That they want me to grill :laugh:
 
Got three 8oz chicken breasts (giggity) thawing, gonna do up some homemade chicken noodle soup. Carrots, celery and crackers on deck.
 
Its a drizzly, drazzly, droozly kind of day here in NC (channeling my inner A.A. Milne), a perfect day for Cincinnati Chili.

I may have posted this before, but I've got loved ones in Cincinnati and Cincinnati chili was a favorite my Mom made frequently when I was growing up. Here's not only a great recipe if you are a fan (or if you aren't familiar and want to try it), but also a wonderful article/valentine to a dish a lot of people love.

I just concocted a chicken noodle soup that would make Gordon Ramsey my bitch! After trying it he would be all like 'Yes chef'.
 
My mother got my wife a pressure cooker and her mother got her a crock pot. I win!

Pan sear it. Use olive oil and seal the flavor of the fish in by searing it. Mmm...

I love fish - but not familiar with rockfish. If it's a flaky white fish, how about poaching it in a milk sauce with some goat cheese (or other creamy cheese), little parsley and salt/pepper, a little lime...
 
Next time you guys make grilled cheese spray the slice of bread evenly with Pam or cooking spray instead of using butter. Makes a nice even coat on the cooking side.

If shared outside of BGO there will be a patent suit though.
 
Did pork tenderloin in the slow cooker tonight. Rubbed two of them with salt, pepper, and garam masala, and nestled them in a bath of 1 cup chicken broth and 4 minced garlic cloves. Cooked on low for two hours, and was the most tender pork I've ever had.

Cooked a half cup of couscous with raisins in the leftover juice (15 minutes on high), toasted some sliced almonds and stirred them in when it was done. Topped it all off with a parsley vinaigrette: half cup minced parsley, 2 minced garlic cloves, half cup evo, 2 tablespoons red wine vinegar, salt and pepper.

Amazing. So, fricken, GOOD!

pan seared lamb chops on top of a bed of white kidney beans and diced tomatoes

the beans and tomatoes are heated up with the lamb drippings, balsamic vinegar, garlic, and rosemary
