What's for Dinner?

I making a mean pho. Just saying.
Thats lots of time to do it right, with a lot of beef bones, veal bones and meat...plus the right spices. Just for the broth. 12+ hours at least if not more. Not to mention clarification

I know what I’m doing when it comes to Pho. Put it this way, I have never had Pho that is better than my own. And yes, making the broth is an art.
 
These are the prime ribeyes I got at Costco earlier this week. Did them on the Weber direct. Bi color corn, kind of hard to find this year. Found them at the local farm right down Brookeville Rd. Fresh green beans from the garden. Wife's favorite.

Chicken Milanese
Cut the chicken breast in half lengthwise and pound it out thin, 2 cutlets
Season the chicken on both sides
Flour, egg wash, than seasoned parmesan breadcrumbs
Pan fry in veg oil til golden brown
Serving with garlic butter parsley egg noodles and pan roasted asparagus
Lots of fresh lemon for the cutlets

Basically they are the same just depends on how you season them. For the Milanese I use parmesan garlic, oregano and for schnitzel it's more plain
 
Red Beans (onions peppers celery and ham hocks, with kidney beans soaked overnight, spices and chicken stock) served over Cajun dirty rice (chicken livers shallots cajun seasoning basically)
 
We had steamed crabs for lunch and had a few leftover. Mrs Skinfan picked 'em, and made some stock with some empty shells, carrots onions & celery. She'll add frozen vegetables and tomatoes tomorrow and make soup.

I don't know how serious you guys are about cooking but this is something I used to watch every night when I got home late at night from the kitchen.

Great Chefs of the World

It always gave me ideas and was just fun to watch after work while having something to eat and drinking some wine. I did a verbal search on Comcast and they have the entire series it goes back to like 1997 I think that is the first series. It's a really great show to watch and gives you tons of ideas as well as instructional technique. It's showing up on Tubi for me

Very educational and for me at least it is fun to watch

I've been under a GERD attack since Saturday, so I'm ready for my first "meal"...I was dreaming about food last night. I've got a 5 Guys nearby and that's gonna hit the spot for lunch.
