The New Year's meal was tender pork loins, sauerkraut, black-eyed peas, collard greens, red potatoes (simmered in margarine for several hours with chunks of bell pepper and onion), cornbread, and cheesecake.
OMG - dinner=off the hook! I almost feel like the effort was wasted on family (who for the most part aren't 'foodies'). One of the best meals I've made in a couple years. Delicious!
Goal, anytime you and or other BGO members wanna come up I'd love to have ya. Between the trout, salmon, halibut and caribou I'm sure we could have some sort of Hell's Kitchen tournament.
Pork Shoulder been on the smoker all night, sitting at 185 right now. I figure another half hour and we should be to 190, my sweet spot. There's a puddle of drool out by the smoker from when I go to check the temp. Gonna do some creamed spinach and coleslaw with.
This was the biggest shoulder I've ever smoked, at just over 11lbs. It was beautiful. I put Pimento Chili powder in the rub and the flavor was spectacular. Really smoky goodness. We just pulled the pork tonight, doesn't need a sauce or anything. I'll make sandwiches later in the week, and am thinking some pork tacos after that. All I know is we've got some good damn eating ahead of us.
