Does anyone ever smoke pork belly? What about venison or other game? I saw a video of a guy from Egypt who is down in Texas and smokes lamb. What about curing and smoking a whole leg of pork and making a ham?
I mostly see that you guys are smoking either brisket or pork shoulder. Get adventurous!!!
Yes, yes and yes...I'm an avid hunter, mainly whitetail deer, turkey, dove and, sometimes, grouse. As far as pork belly, I smoke, or cut it into thick strips and grill it. Sometimes I make burnt ends with it.
Game meat is usually very lean and dries out quickly.
I make jerky with venison, but never smoke it. It's just too lean and best served rare-to-medium rare.
When I make venison chili, I use ground, (that the butcher has blended with beef fat), and stew sized chunks, but I put a quick sear on them and add it later in the cook.
I usually bag a couple of deer, and give one to my Mom, and some to my sons. Thank God rifle season is around the corner, because I ate the last pack venison a couple weeks ago.
I've never considered smoking dove, because they're small, you only eat the breast, so you'd need a shit-ton of them and,(trust me on this) they are tough to hunt. Those little fuckers fly like bats.
It's also pretty delicate and easy to over-cook. The only way I eat it is pan-seared in bacon grease, medium-rare.
I don't cure meats, but will look to start doing that when I have more time. Mrs. Skinsfan won't eat lamb, so I'm not going to bother.
I cannot wait to retire to have more time in the field, and more time in the kitchen.🤘🤘
