What's for Dinner?

I have been on the road in Chicago visiting my daughter and granddaughter for a few days. Glad to be home in NC and am itching to cook something. I get in a little bit of a cooking rut at times and need to find some new dishes to make.
Did you scarf pizza and steak while you were there?
 
I have had a sore throat since Monday and it's getting worse. Thught for sure I had COVID but nope. Just the worst sore throat I've had since I had strep in the 80's. Everything I try to eat feels like sandpaper going down, this is so weird.

The thread title pretty much says it all. Make a batch of grits, using chicken stock instead of water. After they grits are done, stir in grated cheddar cheese, cooked crumbled bacon and a couple dashes of Tabasco sauce. Pour the mixture into a greased casserole dish and refrigerate overnight. blot the moisture off the top, put a piece of parchment paper on a cutting board, put the cutting board on top of the casserole dish and flip it over to remove the slab 'o grits from the dish.

Cut the slab into squares, blot them dry again, dust both sides with flour and fry them in bacon grease in a cast iron skillet until both sides are golden brown. I serve them with maple syrup on the side.
It freezes well. You have to set them in the freezer 1st on a plate with parchment or wax paper until they're frozen solid, (which is only a couple hours), or the vac sealer will crush them. Seal and freeze them into individual portions.
It's a great side dish.

It's not my recipe...I just tweak it a little by adding more cheese and a few dashes of hot sauce. You can search "Southern Bacon Cheesy Fried Grits" for the recipe .

Previously in this thread I think I posted that birria tacos were so good, they were even better than sushi. But I might have miss-spoke. This was really really good. ******* amazing! We hadn't had sushi in ten months. I wanted it for my birthday last summer but I ended up smoking a beef short rib plate on the offset instead. Then we were going to do it over Christmas while my daughter DLSF was in town from SF, but she came and went too quickly. Then we were going to do it for our wedding anniversary last month, but didn't. So last night we were gonna get papa john's pizza because I have ten dollars of "papa dough" which is about to expire and I said WAIT A MINUTE! Let's get the damn sushi we keep talking about and never doing! So we did. :D
 
Yes - you are not wrong Chris. I may have to learn to make my own at some point.
 
I tried making it at home and did that a few times a long time ago. It's a skill that's not easy to learn. I eventually gave up on that idea.

Yeah, the bill was $99.11. And I threw a couple tens in the jar. Not something you want to do every week. But we never go out for dinner. I mean, never. Like zero times a year. We cook. :)

You don't have to break the bank for great sushi, but you do have to take a drive.
The Sushi Queen is a 10-15 minute ride from training camp.
It is AYCE for $25.99. That is not a mis-print. $25.99 for all you can eat and it is excellent.
Our mutual friend Ben turned me on to this place years ago and we've made it a tradition to eat lunch there after camp breaks.
They have a crew making fresh sushi & sashimi to order. The ingredients are fresh and the quality is high. I honestly don't know how they stay in business.
