What's for Dinner?

That sounds pretty damn good.
Bean soup & chili freeze well for us.
I ladle it into vacuum seal bag, freeze in the bag overnight, then vac seal.
A family member (well she may as well be anyway) gave us a jar of her African Peanut Soup, right after I told my wife I want to make this again. It did not have chick peas or greens as my recipe has but it tasted identical. I just tried to find it but can't find that specific recipe so I could post it, but there are a ton of them out there. Apparently it's called stew on soup. Very filling.
 
Love seared tuna, just gotta make sure you don't over cook it. That's really the only way to mess it up.
 
Well, I don't have any lemon pepper seasoning, and I had nothing to make a remoulade sauce with...but it was good. Vicki (kitty) wouldn't stop trying to get into the plate, she's famous for that. Grabbed a piece of tuna about a decade ago, dragged it onto the stairs, then growled at me when I tried to get it away from her. :ROFLMAO:

Yep, agree. Can't believe I got it a perfect medium.
Heated pan up first, watched the bottom while it was in, flipped & turned off heat.
 
I recently bought a carbon steel fry pan and love it. Get it screaming hot, drop in steaks, sear them, then pop the pan in the oven to finish. I prefer it to cast iron.

I know this is a popular way to cook a steak but I just can't not use a grill. At times I sear it in a pan with Char Crust first, we really like that stuff.

skinsmarydu did you cover your tuna with sesame seeds? That's the only way I do this dish, and I absolutly have to have some sort of sauce as tuna is always kind of dry if it's cooked.
 
I used to make an Asian carrot ginger sauce for my tuna that was out of this world. Served with real coconut rice, hard grilled veg and demi glace drizzle. Couldn't keep it in house. Only made 12 a night and they were gone quick. Kind of a nouveau hybrid French Asian plate
 
First cook on my new RecTeq… some BBQ pork Tenderloin. Pretty damned good!

skinsmarydu did you cover your tuna with sesame seeds? That's the only way I do this dish, and I absolutly have to have some sort of sauce as tuna is always kind of dry if it's cooked.

I find that if you put a quick sear on tuna, and serve it rare, it's not dry at all.
I also learned that it's very easy to overcook it.
 
Leftovers...got a lot of stuff to get rid of, and I hate wasting food.
Mrs. Skinsfan gifted me a really nice deli slicer for Christmas. I broke it in today with some leftover standing rib roast for Philthy cheesesteaks on the griddle. I vacuum sealed and froze enough for a couple of cold roast beef sandwiches down the road.
No pics...we were too damn hungry...
 
My wife won't eat it if it's rare, and as we all know it's easy to overcook. So I make a sauce to cover all bases.
I'm in a similar quandary with Mrs. Skinsfan, but at least your wife will eat tuna steak. Mrs. Skinsfan will only eat canned tuna, mixed with mayo, onions & relish on toast....the only way she'll eat other fish is if it's deep-fried, served with ketchup and she only eats well-done steak...I'm talking glove leather, hockey puck steak. :cautious: I used to apologize when I served it. She's the same with pork, so I've learned over the years to modify my technique so our food is done how we like it and it's, (usually), done at the same time. For steak, the sous-vide really helps and I can sear off our steaks at the same time.

My wife is pickier than a teenage girl when it comes to food and it's getting worse. She doesn't like anything, especially seafood. She claims she likes this so I call her on it. :)
