Found a really great Mexican chicken thigh marinade recipe a few weeks ago. Going to smoke some chicken thighs and air fry some salmon bites (first attempt at that). Basically removed the skin from some nice salmon filets (boiling water over the skin and it comes right off), soaking in a marinade made of soy sauce, lime juice, honey, siracha, garlic powder, and sesame oil. Twice baked potatoes to finish things off.
 
Anyone got a Memorial Day dinner going? Judging by the insanity at my local grocer this morning, I'm thinking there are a good number of folks who are...

I bought a 6 lb brisket flat. Injected it with my magic injection, copious rub of garlic powder, freshly cracked black pepper, and celery salt and it's on the smoker. Did a homemade texas style BBQ sauce to serve it with, along with Green beans with baby potatoes on the side.
 
Made this chicken and mushroom dish the other night and my wife said we could eat it any time. It's an Italian style with a little Mediterranean seasoning. Very quick.
 
I wish my wife was as big a fan of mushrooms as I am. She’ll eat them but it’s not one of her top 10 foods or I’d cook with them a lot more often. That recipe looks simple and tasty.

I love mushrooms and the missus doesn't care for the texture. Sauteed mushrooms are one of my favorite side-dishes.
 
Could not get to sleep last night - it happens to me occasionally. So got up and decided to stay home today and work Saturday instead. Blessed with a cool boss who lets me do what I want :)

Wife works today and all weekend so decided to do a batch of Brunswick Stew. It's not a summer dish but nobody tells me what to do! The origins of Brunswick Stew are in dispute, as you can read HERE if you are interested. But basically, here in the Carolina's, it entails combining smoked chicken and pulled pork with some chicken stock. lima beans, corn, tomatoes, potatoes, and Worcestershire and hot sauce and slow cooking for hours until it is a thick soup.

It's one of those dishes you spend a day making and then spend a week eating. I love recipes like that where a ton of love goes into them. I don't know when it'll be ready since I just threw some small chickens and a Boston butt on the smoker. But I know it will be good.

Love the article on the history. Growing up in Virginia, I would declare the origin should never be in doubt! :)
 
You are likely correct - only makes sense since the origins are likely British to begin with. When I told my daughter what I was making she asked ‘Squirrel?’. Not this time honey. But you know, here on NC we use what’s available. Squirrel, possum, Democrats…

Tbh I ate some squirrel gumbo before. At least my friend who cooked it said it was squirrel...

Whatever it was, I recall it being damn delicious.
 
Did some burgers on the Traeger last night, but star of the show was some double-fried hand cut french fries. Man - so good.

Grilled a nice rib-eye myself along with some roasted peppers and onions.
