What's for Dinner?

I was hoping you had that saved in a text file somewhere. That's a whole lotta typing. :)

Damn, you guys getting all fancy I'm making meatball subs on hoagies this evening.

Chicken Caesar with some bomb ass croutons sounds pretty damn good.

Made croissants, took ten hours between yesterday and today, but totally worth it. Unbelievably good, like Parisian croissants I've loved.

Putting some baby backs on the smoker in about an hour. Mixed up some SC gold sauce for them. Made a broccoli slaw yesterday that is in the fridge getting perfect.

You inspired me to do some ribs today too Chris. Home alone, wife has been camping out at the hospital all weekend. Doing the BRITU recipe on my WSM today. Didn't have any cayenne so put some crushed ghost pepper in the rub. Hopefully, not too much :) Nothing better than smoking/grilling in the snow if you ask me.

Doing some cold weather smoking myself, currently 58 degrees here. Brrr...

WSM temperature has dialed in perfectly. Using your 321 method.

They'll turn out amazing...

Temp hasn't waivered in 90 minutes-

So tonight it was meatloaf, mashed potatoes and green beans.

Last night I made Chicken and Dumplings for the first time, and I hate to brag, but it was amazing. Really light, fluffy dumplings with a rich stew-broth.

Good stuff.

Two great comfort food meals. I'm jealous. :)

What's the best way to make the dumplings Goal? I remember my grandma used to take canned biscuits and tear each one into smaller pieces.

I cooked the chicken in a little oil, then poured off the oil (to flavor the dumplings with chicken - a little), added in enough melted butter to get me 3 TBSP, added a cup of milk to it, then added all that to 2 cups of flour and a TBSP of baking powder. Mixed it all together and added it into the soup in spoonfuls, cooked for 15 minutes and enjoyed.

Last night we did breakfast for dinner. Love bacon, eggs, grits, and pancakes for supper.

Tonight trying to decide between grilled Salmon and fried oysters. Will go by the market where buy all my seafood to see what options I have. Nice thing about market I deal with is the owner is a crabber, so their crabmeat and crabs are literally from boat to market.

Bought a butterflied leg of lamb last night. Took it out of the fridge this morning and trimmed most of the fat off. Giving it my Dad's steak marinade treatment. Rub it all down with cut garlic cloves. Then made a marinade with a few cups of red wine, the garlic, a handful each of dried parsley and dried minced onion, 3 crushed beef bouillon cubes, some Accent, and a little salt and pepper. Soaking in that now. Will grill it and serve it with baby yukon potatoes, sliced, tossed with olive oil, salt, pepper, italian seasoning, and minced garlic, and roasted in the oven.
