What's for Dinner?

I do think as a group we could assemble the greatest feast in the world, hands down.

Tonight, I decided I was in the mood for eggplant parmigiana. My wife and kids hate eggplant though. They're obviously all spawns of satan. So for them, I made veal parmigiana. Lucky for me, I got to eat both :D

As many times as I've made both of these, this was by far the best it has ever come out, and everyone is still talking about it. The 3 hours it required to prepare and cook it all was well worth it. The best part is, there is plenty left over and it's going in the freezer. Next time, prep time will be measured in minutes :)
 
I always make too much marinade, and use it to brush on my steaks as they're cooking. I don't think you can go wrong with that marinade. And the minced onions are just the plain old store bought dried ones in the spice section as others have said.

If you get the chance to buy some really high quality steaks, really rub them down with the garlic halves, then let them sit in the marinade for 3 days in the refrigerator - well, I don't think you'll even have a better steak.
The butcher a few blocks up the road at the farmer's market owns his own farm, processing company, etc. and gets all of his own meat super fresh, because he raises and slaughters his own stuff. I noticed when I was in there today buying veal that he sells filet mignon for $8.99/lb. That definitely beats the $18.99+/lb. all the stores around here charge, and it's way fresher. I think next weekend I'm gonna buy some of those bad boys and try your marinade. I have a hunch it'll turn out as epic as it sounds.

Thats a good price for the filet, we usually get it around (often a dollar more per lb actually) that when they do tenderloins on sale at the grocery. We just have the butcher cut them into steaks.
 
Damn. Just had lunch at a hole in the wall in Charlottesville called Belmont BBQ. The gave me a large Styrofoam cup (about 10oz maybe), one layer of cheesy hash browns on the bottom, then baked beans, then pulled pork with mustard sauce, then coleslaw. Really really good.

Didn't break the diet either, not as bad as you would think.
 
Next time you go through there, hunt down 'Durty Nelly's'. Great pub with it's deli (Wayside Deli). Amazing sandwiches. I lived there for a couple of years :)
 
Gotten into the habit of breaking out the crock pot on Sunday mornings. Doing an easy 'white chili' recipe (although, technically I'm not supposed to add tomatoes, which is a rule I ignore, as I don't think you can really call it 'chili' if you don't use tomatoes, at least not in my world). Basically, couple of chopped up onions, chopped jalapeno, garlic, green pepper, some chicken stock, chopped chicken breasts with a dusting of rotisserie chicken rub, a bag of white navy beans (pre-soaked), dash of olive oil, some chili powder, oregano, salt, and cumin.

Or a Red Clam Chowder, as opposed to a White Clam Chowder, for the same reasons I just described.
Or is the "white chili" name more of an ethnic reference, than an ingredient reference ? :)
 
Some of the best meals I've ever eaten were out of a crock, but everything I've ever attempted in one sucked. I just don't have the touch for those things I guess. My meat always comes out too rubbery, the veggies always come out too hard, I just can't seem to get it.

Tonight, I'm making catfish chowder with the catfish we caught the other day. 22 lbs of filets, so a lot of them are going in the freezer, but a lot are going in the chowder :D

Last night I threw together something I've never attempted before off the top of my head, and it turned out to be one of the best things I've ever made....

I cut up some asparagus, zucchini, snow peas and garlic, and tossed them in a combination of olive oil and key lime juice, and threw them in the steamer. In a sautee pan I sauteed some shrimp, red onions, scallions, portabellas, and fresh parsley (all done in olive oil). When it was done, I diced some romas, and tossed everything together with a mixture of freshly grated pecorino cheese and seasoned salt.

It was so damn good, I could have eaten way more than what I made. Definitely going on the menu for future use :)

White chili refers more to the fact you use white beans and chicken/turkey instead of red beans and beef.
 
I'm guessing he tried to make the "White Chili" recipe and it didn't turn out so well, and when Extreme pointed out the true interpretation of "White Chili", he realized where he erred, after spending hours on the wrong kind of chili :D

Fear - that's why I said I wasn't supposed to add tomatoes - it's a 'white chili. The recipe calls for white pepper for heat with no chili powder. I've never been one to feel we'd to a recipe though.
