What's for Dinner?

I love beets. I just wish someone in the house other than me and my daughter (when she's in the mood) did, because I never get to eat them.

If you want a great side of beets, try roasting some red and golden ones, and making a glaze of brown sugar, balsamic vinegar, olive oil and pepper to coat them in, it's badass.
 
Yeah, I was just thinking the same thing. I even like the ones you buy in jars at the grocery.
 
Just a hamburger pattie and small caesar salad. Ginger ale to wash it down.
 
The beets were amazing! We got golden, red and candy cane beets at the farmer's market on Saturday morning, roasted them with olive oil, salt & pepper. Delicious! I found a balsamic glaze recipe, actually, but we're trying to limit sugar intake.

Have you ever tried golden beets? The flavor is completely different. Some people that don't like beets tend to like golden beets, they're just not as readily available. Although out there in SD it shouldn't be a problem at all.

I wish I could limit my sugar intake, I just have a sweet tooth that will beat me to the ground and drag me to a sugar bowl by my ear and drown me in it if I ignore it.

First time I'd had anything other than the standard red beet; the golden & candy-cane beets definitely taste different. Still have that "beet" taste, but not nearly as earthy (they don't taste like dirt as the gf says). The candy-cane beets probably the least so.
 
Boone, We made steaks with the marinade last night and OMG. Awesome flavor! Even my ultra finicky kids loved it and went for seconds, which they never do.

One thing that I wasnt sure of is that the steaks absorbed all the liquid after just a couple of hours soaking. Is that normal? Should we make more next time maybe? (Maybe we used too much meat?)

Either way, incredible recipe and thanks for sharing that treasure from your Dad. It means even more that it came from your family.
 
How do you dry minced onion? Just leave it out for a day?

Chicken noodle soup. It's about the only thing I can stomach. I thought the vomiting was over yesterday...then it hit me again about an hour ago.
 
We got some local whitewine vinegar and Em made some glazed pork chops with it. Had steamed broccoli and Caeser Salad to go along with it.

Is it something you buy at the store? I can't imagine it's a good idea to leave a bunch of onion on the counter for a day.

We just used the stuff that's in the spice aisle at the grocery store. I think they all carry it.

I was thinking of trying to put some diced onion in our dehydrator and see how they come out too.

I always make too much marinade, and use it to brush on my steaks as they're cooking. I don't think you can go wrong with that marinade. And the minced onions are just the plain old store bought dried ones in the spice section as others have said.

If you get the chance to buy some really high quality steaks, really rub them down with the garlic halves, then let them sit in the marinade for 3 days in the refrigerator - well, I don't think you'll even have a better steak.
 
Cooking today's AND tomorrow's meals...

Got a boston butt on the grill - going to smoke/indirect cook that for about 10 hours with a rub, apple wood and garlic bulbs for smoke, drench with cider vinegar/apple juice/pepper flakes every 30 minutes or so. Then I'll make pulled pork with that for Sunday.

Dinner tonight is crockpot chili with cubed steak, bacon, plenty of jalapeno (my go-to recipe).
