What's for Dinner?

Em and I went to Wade's Mill about 25 minutes from us a couple of weeks ago and bought some locally milled grits, so tonight I made Shrimp and Grits. Cooked the grits with half and half and milk, added some butter and cheddar cheese at the end; cooked up shrimp in some butter, cayenne pepper and paprika; then made a roux with the shrimp/butter mixture - added some flour and chicken stock, then added some cream, and finally about 4 ounces of grated smoked gouda. OMG.

Our oldest doesn't like grits and she asked for seconds.

Next time sauté some onions, peppers, and andouille sausage in a tomato base sauce, then add shrimp. Would be awesome with your grits.
 
Would you believe I'm obsessed with seafood (as evidenced in this thread) and Southern food, and I have never tried shrimp and grits. I guess I'm gonna have to **** or get off the pot :D

Tonight, we're taking the kids to the carnival at Mt Trashmore. So this fat guy will be eating better than anyone tonight, even if my heart tells me I'm stupid.
 
Mostly going the lazy route tonight...bought some stuffed chicken breasts to grill and some pesto pasta salad from Fresh Market. Did buy some mixed small sweet peppers I halved and seeded. Stuffing each with a little fresh dill and a wedge of fresh mozzarella. Going to drizzle with some garlic olive oil and fresh pepper and kosher salt and also grill as an appetizer.
 
Tonight, I had a nice salad filled with grilled chicken, pineapple slices, grape tomatoes, cucumbers, onions, grapes, banana slices, tangerine slices, lettuce, broccoli, strawberries, honey glazed walnuts, and raspberry vinaigrette.

Pennsylvania Dutch Diet Birch Beer to wash it down.
 
A friend of mine runs a seafood business in Surry. He told me the big thing now is fried hard crabs.

They've done that at D&M down here for years. I just never understood how or why anyone would be willing to eat a fried hard crab.
 
Making barbecue burgers with onion straws tonight, and grilled potatoes. Cheating on the BBQ sauce, using Sweet Baby Rays since I ran out of time. Should still be good.

What do you mean by 'hard fried crab'? Are you saying they actually coat and fry adult blue crabs? And then you open and eat them as you would normally? What's the point of that - and if you don't cook blue crab steamed with old bay, well a ****ing criminal in my world :)

And Goal - what the hell is an 'onion straw'?
 
Every fried crab I've had is a soft shell crab, battered and fried. Delicious, actually, when done correctly. Though I tend to agree that a good simple crab cake is this side of heaven for me.

As for the onion straws, I took A mandolin to half an onion, then tossed the super thin slices with paprika, garlic powder and half a cup of flour to coat the onions, then fried in peanut oil. Kind of like onion rings, but thinner and crispier. Effing great on a burger, btw.
 
Those sound good. I know what a fried softshell crab is - they've been aournd since people were crabbing. Extreme referenced 'fried hard crab' - so I'm wondering what the heck that is?
 
Some king crab legs and some steamed shrimp (with homemade shrimp boil) tonight.

Btw - I WILL be trying that fried crab recipe next week while we're at the beach and report back.

Well, it is one of those days. Just a basic BLT tonight with some fries. Apple pie with ice cream too.

The plan was for my daughter to leave Fairfax early this morning and get here in time for church. She got to near Elkton and had an accident. She is fine, but the car is junk. These accidents seem to run in the family. Just glad she is ok and we'll get together during the week of the 4th instead.
 
Last night we had grilled lobster, grilled scallops wrapped in bacon, steak kebobs, guacamole, broccoli casserole, spaetzle, cole slaw, salad, and much more. My stepdaughter and her husband had us and his family over. We all made something. Ton of food.

From what I understand people like the batter as much as the crabmeat.

Speaking of grilled, we had a simple meal tonight. Grilled squid, couscous and freshly picked tomato's and basil with a touch of balsamic on them.
 
Sauteed some kale in Garlic and Olive Oil tonight. Fantastic!

Also had some cheese tortellinis, store bought with store bought sauce, but they were pretty good.
 
El, did you blanch the kale first? I usually do it that way before sauteeing it-and yes it's wonderful.:)

Dinner last night was roast pork sirloin with a garlic and peppercorn rub along with Arroz con Gandules (pigeon peas and rice, a popular dish in the Caribbean)
