What's for Dinner (Thanksgiving 2024 Edition)

My favorite way is to spatchcock it and cook it brick style on the grill with a cast iron griddle plate on top with a 25 lb weight on top of that. It compresses it and cooks it from both sides. Comes out crispy and juicy and falling off the bone. I have never fried one - don't ask me why - just haven't gone there. This year, doing it traditional style (except for the pellet grill aspect).

I grew up on turkey cooked until it was like shoe leather in a standard oven. I kind of like it like that tbh.
every sb sunday my best buddy used to deep fry a turkey and i have never tasted turkey ever cooked better.
 
Yeah, I know people swear by it, just never taken the leap.
 
I think the secret to great turkey, regardless of how you cook it, is brining. That's really the only way to infuse great flavors and aroma into the turkey and to ensure it's moist and juicy no matter how you prepare it. It is a game-changer imho.

larry had some type of seasoning he injected in it the night before that made it that much more tasty.
