Light stocks vs. dark stocks.
5 mother sauces (Béchamel, Velouté, Espagnole, Tomato, and Hollandaise)
Game
Fruit and vegetable sauces (coulis, etc)
Vinegar and sugar sauces (gastrique)
Butter sauces (buerre blanc o buerre rouge)
Desserts
I cannot talk to a lot of formal/traditional Chinese or Japanese traditional sauces or techniques.
Anybody here who loves these forms? Look up Escoffier...that was my bible
