Oyster fix

I used to do an Oysters Royale.

Basically it was broiled oysters with a gratin of blood orange champagne hollandaise (maltaise) topped with caviar. Top dollar apps. Fxn great eats
 
You guys got me jonesing for some so I bought 3 jars yesterday and made an oyster chowder with onion, garlic, potatoes, corn, broccoli, carrots, milk/cream, chicken stock, bacon and lots of black and white pepper. It was really good.
 
I’ve never had the guts to buy jarred ones. Are they close to fresh and not loaded with preservatives?
 
I try not to think about it. But they are certainly better than using canned. I made sure they were well cooked.

I've yet to buy shucked pints, but I wouldn't hesitate to use them for fried oysters. I'm sure that's what restaurants do....
 
That's exactly what I do. I got a fry daddy. Get 'em out of the shell, roll em in a mixture of corn starch and corn meal (coarse is best) and a bit of cayenne. Served on a toasted Amoroso Club roll with some tartar sauce. That's what I'm talkin' about. But for raw, I'll go for the live ones. In fact, I've brought coolers full of oysters and clams to the tailgate. Everybody loves 'em, but the downside is almost nobody knows how to open them, so I have to open just about all of them and that gets old quick. They're good though. My favorite omelette is an oyster omelette. Live oysters. Add a little grated cheddar cheese and some scallions. Cook gently. Easy peasy. Nothing beats it. Yeah, I'm from Maryland.
