I know we have a general thread for 'sauces' but let's be real - hot sauce is a completely different beast and one which has an entire subculture built around it. Whether you like mild vinegar-based sauces like Texas Pete, or insanely hot Carolina Reaper or 'Pepper X' sauces, or everything in between, the sheer number and variations of hot sauce are staggering.
This summer, having grown a healthy amount of 'Tabasco' peppers in my garden, I have gone down the rabbit hole of making hot sauce at home. I fermented my peppers with some garlic and a few other ingredients for a couple of weeks and then turned that into a very good approximation of store bought Tabasco.
I recently found a company in Johnson City Tennessee that is a commercial provider of pepper mash - Magic Plant Farms - and they have every kind of pepper known to man in large volume mash (both fermented and unfermented). I have two gallons of Tabasco pepper mash waiting for me to do something with.
I will probably continue sharing my home hot sauce journey here, but the main purpose of the thread is to hear about YOUR favorite hot sauces.
One fantastic hot sauce I have enjoyed was shared with me by Om, 3 Peppers Lemon hot sauce. I think this is the brand but correct me if I'm wrong Mark?
