Holiday Cooking! (Thanksgiving, Christmas etc.)

So my old lady used to do a very traditional Dominican Christmas menu, and she really wants to do something different this year. Her mom passed about 4 or 5 months ago and her mother's menu was so heavy on starch it was insane.

When I get down there (hopefully next Friday) we're going to plan something different
 
Seafood maybe?
She loves my Greek salad so that's a win.

She is allergic to shrimp.

She just got her oven fixed so I was thinking about a whole roasted chicken and homemade lasagna.

My grandmother was Sicilian so you know about that with all of the seafood courses for Christmas. Seafood is bountiful and cheap down there. Forget about finding a whole rib roast, whole duck/goose or bone in ham.

I was thinking about doing a whole roasted fish, something like snapper stuffed with limes and herbs. Lemons are hard to find down there and are crazy expensive. I bought a small grill the last time I was there so I could also do a whole grilled fish instead.

Instead of the whole fish I was thinking about a Mediterranean fish stew that I do which is really good. Kind of a hybrid between bouillabase and cioppino. It's easy.

Italian sausages with grilled red peppers (marinated afterward with good olive oil and garlic)?

I make a killer risotto but I don't know if I can find the correct Arborio rice down there. I would have to smuggle in my hand picked Persian saffron 😆

I do a very slow poached whole octopus in olive oil (like 2 or 3 hours depending on size) and then finished on the grill, which is fantastic. Absolutely needs fresh lemon.

I can't get too fancy because people's palettes are very basic; i.e. asparagus won't fly.

I also like to keep things simple with things we can put in the oven or sit on the stove. I don't like this last minute rush of trying to get everything on the table. I like it to be casual and served in courses if I can

I do octopus the same way and I agree it's amazing.
 
I believe Pete (Miles Monroe) being of Italian heritage has fish stew (Zuppa di Pesce or Cioppino) in his holiday rotation...

Let me try to remember it's been awhile. It's all about the broth. Below is an approximation but you will get the gist. You can put any Seafood shellfish or fish into the broth that you want. The last time I did it I used swordfish and that was very good. Just don't use a very soft fish like flounder. I have done chilean sea bass before also.

2 bottles of clam stock
1.5 cups of a good white wine. Buy two bottles because it goes really well with the soup. Sav. Blanc, Pinot Grigio, etc
3 - 4 cups water
Bay leaf or two
Big pinch of good saffron
1 can whole tomatoes chopped
2-3 garlic cloves minced
2-3 leeks whites only
1 small onion
Med fennel head cut up to bite sized pieces
(you can use a little bit of chopped up celery and fennel seeds if you can't find fresh fennel)
2 med carrots cut up to bite sized pieces
Pinch of red pepper flakes
Fish bones (if you want to strengthen the flavor)
Zest of 1/2 an orange
Juice of that orange
Fresh lemon juice to taste
S/P
Fresh chopped parsley
Firm white fish about 1-1.5 lbs. Bite sized pieces

Make the broth first and make sure all of the vegetables are cooked and all the flavors come out. Adjust as you see necessary. Just let it simmer slowly it doesn't need to boil. Pull out the fish bones after 20 or 30 minutes. I rarely use the fish bones but it helps boost the flavor if you like it to be pronounced. Put the fish in last and let it cook for about 10 minutes. Add the fresh parsley and stir gently at the very end. Serve with toasted French bread or homemade garlic bread

Curious as to what everyone is doing for their Christmas meal?

I had planned to do a ham on my BGE, something I've never attempted, but my local butcher was all out of uncooked hams. I bought a Smithfield spiral ham and I'll let my wife manage that part of it. Going to make some cheesy potatoes as a side - basically boiling several types of small potatoes in salty water, draining, adding half and half, butter, sour cream, chives, bacon, and cheddar cheese and partially mashing. Doing a homemade apple pie to go with. Think the wife will do a green bean casserole. Pretty easy this year, not going to stress about the cooking since it will just be my wife and I, our son, and his girlfriend (who is a vegetarian most of the time).
 
I think I'm doing a chicken breast, mashed taters, and some bean/corn mix of some sort. Jiffy corn bread.

This could all change into nothing, but I just roll with how I feel. If I don't feel like cooking, Chinese delivery will be just fine.
 
Traditional Italian Lasagna
Roasted whole chicken with oregano and lemon
Italian sausage red sauce

Greek salad
Garlic bread

5 or 6 people. Pretty basic, but new for them
 
Whiskey, Standing Rib Roast, whiskey, garlic mashed taters, whiskey, grilled asparagus, whiskey & apple pie.
Hubby and I used to make a standing rib roast every year, he found an awesome recipe online, with rosemary and a shitake mushroom sauce. I found it during the move with all of the notes we'd made on it. We had soooo much fun cooking together.
 
Oh, and I forgot...I always make my mom's recipe Broc/chez casserole. It's so basic and simple.
