Beating Bobby Flay - what's your 'signature dish'?

Although my wife is not a foodie/wannabe chef like I am, she does enjoy watching 'Beat Bobby Flay' with me occasionally. We had this conversation the other night. For those unfamiliar with the show, the premise is that two chefs come in and compete in a brief 'cookoff' using an ingredient Bobby picks (it might be 'porcini mushrooms' or 'prosciutto' or something like that). Whoever wins that cookoff gets to face Flay making their choice of 'signature dish'. One presumes this is the dish they are absolutely BEST at making and that everyone loves.

The thing about Bobby Flay that blows my mind is that, not only are contestants routinely unable to come up with dishes Bobby is not familiar with, even when he hasn't made the dish before, he still manages to win the battle because of his ability to create incredible flavor competitions.

So, the question is - what would be your 'Signature Dish' were you to face Mr. Flay in culinary combat?
 
Hmmm best I could do is Frutti Di Mare. Generally not a very complex dish, mainly shell fish in a marinara, but I have a couple of twists I doubt anybody else is doing. The dish is easy to eat being clams and muscles open right up, shells removed from shrimp prior. My twist is cracked crab claws, and stuffed squid. You can cut the claws down the sides prior to cooking, which makes them easy to eat. Squid is stuffed with seasoned ricotta. The stuffed squid is the clincher, as it's not very commonly found... My own recipe for the marinara, and it served over linguini.
 
That sounds absolutely incredible - and molto italiano!
 
That’s awesome. I’m sure he is but he’s the Patrick Mahomes of cooking and has earned his rep.

I first discovered Flay when he was doing a cable show called (I think) ‘Grillin and Chillin’ with Jacqueline Malouf who I an absolute massive crush on. Loved that show!

There is no dish that I can make that would even come close to beating Bobby. Don't forget that his show has a time limit too, so you'll be scrambling regardless of dish.

My first Bobby show was when he was in the field competing against the chefs at their restaurant. Their current show is OK, but I thought it was fabulous when he was setting up in front of their restaurants on the streets to beat them.

My wife loves cooking shows. Top Chef used to be one of our favorites but after a few years they get stale.
 
Vienna sausages in a nice Boone's Farm Strawberry Hill wine *cough* reduction with fried okra.
 
I’d go with grilled peanut glazed Cornish hen. I’d serve it with glazed carrots and wild rice with mushrooms.

I used to make this dish as my “And he can cook!” dish to impress girls. It worked rather well for years.

It certainly wouldn’t beat any Cornish hen dish Bobby could come up with, but it charmed the pants off of my guests. (Literally? Who’s to say?)

My “yeah he really can cook!” (Round 2) was either Chicken Piccata or Chicken Marsala served with angel hair pasta and a small side salad. But those are dishes Bobby could could with one hand tied behind his back and probably blindfolded.

Some guys have looks, athletic ability, or general charm. I had none of these things. But I could cook and weaponized it! :p
 
I'm sure Bobby has made 'Butter Chicken' Indian style at some point in his life but that would be my choice against him. It is one of my more complex recipes which I would hope to use to my advantage. Below are the steps minus the ingredients. If someone wants the full recipe, I can post that too since I don't mind sharing.

Steps​

Spray 4-quart slow cooker with cooking spray.
In 10-inch skillet, heat butter and oil over medium-high heat.
Add half of the chicken and cook, turning once, until browned, about 5 minutes. Transfer to slow cooker leaving juice.
Repeat with remaining half of chicken.
Reduce heat to medium
Add onions to skillet and cook until softened, about 4 minutes
Add garlic and gingerroot; cook and stir 2 minutes
Add garam masala; cook 30 seconds
Add tomato paste and salt; cook and stir 2 minutes
Add chicken broth, and scrape bottom of skillet with wooden spoon. Transfer to slow cooker
Cover and cook on Low heat setting 5 to 6 hours. At last 30 minutes of cooking, stir in whipping cream.
Transfer to serving dish, and garnish with cilantro leaves. Serve over rice, if desired.

I feel like I watched a butter chicken battle on BBF.

But I can’t remember .

My wife actually makes a version in our instapot. It’s not quite exactly the same, but it’s good.
