  1. What's for Dinner?

Made mac and cheese over the weekend, and put bacon in it, which by itself made it even better. But then I took the bacon grease and made the roux for the bechemel sauce out of it and that was just... great. It was great. Used basic white cheddar cheese and a little nice Parm but that was it...

I mean... it IS Pumpkin Spice season so...
  3. What's for Dinner?

Biria Tacos tonight. Slow cooking Beef Chuck with dried chilis - gonna be great. Will have with refried beans, guac and pico.
  4. What's for Dinner?

I made Carnitas for the first time last week and I'm not sure why it took me so long to make them. Stupid. Essentially, dice up (1 inch pieces) a boneless pork shoulder and marinade in a citrus/chili mix then cook it around 250 for 3-ish hours, pull the pork when it's fork-tender and reduce the...
  5. Birth of a Beer...

I'd have tried it. The milkshakes are hit and miss for me, but often I look for a little sweetness to cut the sour/hoppy which can be a bit much sometimes...
  6. Birth of a Beer...

Basic City here where we live has possibly the best lineups of hazy's in VA (them or Triple Crossing imo) and I love those. The Milkshakes are... fine for me. THey're OK but not my favs, I was mostly giving you a hard time. There are certainly days I crave a pastry stout but more and more I...
  7. Birth of a Beer...

John. JOHN. I'm going to NEED some of that Barleywine please. I am becoming a bit obsessed with barleywine and have quite a bit aging in my basement right now. I have some local stuff but also from Sierra Nevada and Goose Island that I am saving to potentially do some verticals over the years...
  8. What's for Dinner?

Wow I suck at keeping this going. :D Made bagels yesterday afternoon, turned out fairly well though they certainly don't look as good as store-bought ones. Taste great though. Then made turkey sausage patties with fresh rosemary and fennel fronds - turned out very well. Cooked up some...

Sorry, been on vacation for... like... ever it feels like. Our middle daughter made Limoncello last summer and we loved it - really good stuff. And some friends make Kahlua that is divine, good to know how easy it is - I might have to give that a shot when we get home and settled.
  10. What's for Dinner?

Made roasted chicken last night in a new, different way. I preheated the oven with my carbon steel pan in it to 450. Once heated I put the whole chicken in and left it there until it hit 120 (about 30 minutes ish) and then turned the oven off until it hit 160. I took it out of the oven and let...
  11. What's for Dinner?

Oooh, it was good. I shaved the sirloin tips, cooked on cast iron for a few quick seconds, topped with cheese and a top to achieve good melting. Then added carmelized onions and cooked peppers. Bread was slightly too soft, that was the only problem at all, I'll fix it next time.
  12. What's for Dinner?

Gonna try Philly Cheesesteaks tonight. Rolls are rising now, got sirloin tips and American and Provolone cheeses ready to go.
  13. What's for Dinner?

Made pita bread and homemade hummus-type dip (think chickpeas whole + yogurt + tahini + lemon) and that was excellent. Threw in some stuffed grape leaves for good measure and everything was fantastic.
  14. What's for Dinner?

We're in Nag's Head for Spring Break and we went clamming with the kids on Tuesday. Got about 40 clams or so and cooked them up Wednesday - they were pretty great. Just did a simple garlic wine sauce and made some focaccia bread to go with to sop up the sauce. It was all terrific, made even...

Oh wow, that sounds amazing, bet it would kick up the taste levels on just about anything.
  16. The BBQ Thread

That looks stunning. Friend of mine just bought an outdoor pizza oven and keeps bragging about his pizza. So I fired up the Egg and got the temps up to 750 and tested a pizza. It was great. So when we get back from the beach I'll be doing some personal pizzas for the fam.
  17. What's for Dinner?

Gonna try some cauliflower tacos where the cauliflower is simmered in coconut milk, then dressed with a coleslaw with some coconut milk. Probably tomorrow, we'll - been looking forward to this one since I aw the recipe.
  18. Vacation Plans

Yeah, we took the fam there a couple of times when the kids were smaller and they still talk about it. Good memories for sure.
  19. What's for Dinner?

Had a fun dinner last night, made snacky dinner. Spinach-Artichoke Dip, homemade hushpuppies and a pizza dip. The pizza dip was cool - I used pizza dough, divided into 30-some pieces and rolled into balls, then dipped into melted butter with pizza spices. I put them in a ring around a cast-iron...
  20. What's for Dinner?

Your daughter's recipe sounds like Pasta al Limone and it's one of my favs. The one I made last night was very good, but the lemon flavor wasn't as pronounced as I would have liked. I put some zest in the pasta water and I think I'll amp that up next time, along with some more zest in the sauce...
