  1. What's for Dinner?

Made a Walnut Pasta with fresh fettucine last night that was incredible. Essentially, grind up walnuts (leave some larger pieces, but get it pretty fine) and mix with cream and parm and viola. It was exceptional. Tonight I'm going to try a lemon-pesto pasta with fresh spaghetti. The wife...
  2. Whatcha eating tonight?

We've got a variety of chips/dips/pretzels/cheese/etc - mostly snacky stuff the kids will like. I happily found a 4 pack of My Bitter Valentine from Alewerks in Wegman's yesterday that I'm looking forward to, along with a Belgian Ale from the Bruery that I'll be drinking. You?
  3. What's for Dinner?

    It was good.
  4. What's for Dinner?

Got a ham on sale over Christmas and stuck it in the freezer. Pulled it out last week because... Wednesday. Then over the weekend I made a pork shoulder in mojo sauce and will take the leftovers with homemade Cuban Rolls to make Cuban Sandwiches with citrus pickles. Pretty pumped about this...

Give it a shot and let me know how it goes. PERFECT with Naan Bread. You can adjust with additional peppers if you like it hot (which I know you do) - I like more of a subtle heat that leaves me sweating without destroying all feeling in my mouth. :)

Ever made Butter Chicken?? Similar idea to Tikka Masala but slightly different ingredients. I make it once every few months and EVERY TIME ask myself why I waited so long to make it again.
  7. Bread Thread

Making naan bread this week with some shakshuka. Love that stuff. Lord knows I've ade my share of dense, brick-like bread - but you're right, when it turns out well, there really isn't anything like it.
  8. Vacation Plans

Oh man, have I been going stir-crazy not being able to travel at all. We canceled a trip to Napa last Summer that totally bummed me out. The wife and I went to Puerto Rico for New Years and that was amazing. Planning on going to Casablanca this year, possibly right after Christmas as well, we'll...
  9. Bread Thread

Being the walking cliche that I am, I've been baking a LOT during the pandemic, and am excited to try bagels this weekend. Also will be smoking salmon on the Egg at the same time, but that's a different thread. Curious what baking adventures anyone else has had?
  10. The BBQ Thread

Agreed. Though as Mike said, if I have enough beer in me the challenges just kind of melt away.
  11. The BBQ Thread

Yeah. I was pressing "Post Reply" and thought to myself - what a dumb question for this group.
  12. The BBQ Thread

Curious - what the temp you draw the line and decide not to grill or smoke? I'm making a pork shoulder this weekend and it's supposed to be mid-thirties which should be just fine. Just wondering what the coldest temp you've ever grilled or smoked in is?
  13. Instant Pot Anyone?

Just to be on the record, I giggle a little every time I see the title of this thread.
  14. What are you drinking?

If you do, I'll drive down to pick some up. I'm really digging that style and you always put out great stuff.
  15. What's for Dinner?

Yep, the butcher paper is money for brisket, at least in my opinion.
  16. What's for Dinner?

Damn son. I have a 16lb-er waiting in my basement freezer for when we can have social gatherings again. Psyched to smoke that puppy at some point (hopefully this year) to celebrate. Been making my own bread lately (yeah, lazy stereotypes are accurate sometimes) and experimenting with a lot of...
  17. What's for Dinner?

Made Drunken Beans last night with a Mexican Lager from Brothers in Harrisonburg and some Tequilla we got in Mexico. They ended up really great over some cilantro/ancho rice. Not as good as the rice and beans we had in Puerto Rico but still pretty damned good.
  18. What was your favorite cereal growing up?

Yep, we had Kix and Cheerios and Rice Krispies. I would add sugar to all of them because... I like flavor?
  19. What are you drinking?

Got the 12 Days of Christmas from the Bruery out of San Diego and it's pretty great. 12 different styles of (mostly) Belgian beers and we're enjoying all of them so far. Also, have to say I had Triple Crossing's (in Richmond, VA) aged Barleywine and that was probably the best Barleywine I've...
  20. What's for Dinner?

Made empanadas last night that were really good. Not as good as authentic Latin American empanadas but they'll work. My crust was too pie-like, imo though my 14 year old told me if I change anything she'll throw something at me. Made a quick shrimp salad with it, with lime juice, mayo and sour...
