I'm still waiting to hear about people learning how to cold smoke meat. You do not know what you are missing!

Cold smoke a whole prime rib and then cook it in the oven for Christmas. You can thank me later

Does anyone ever smoke pork belly? What about venison or other game? I saw a video of a guy from Egypt who is down in Texas and smokes lamb. What about curing and smoking a whole leg of pork and making a ham?

I mostly see that you guys are smoking either brisket or pork shoulder. Get adventurous!!!

Yes, to pork belly but I'm not a big fan of that one. Here are some pics of one that was cubed up smoked as pork burnt ends.

Found a very nicely marbled tri-tip at Boarmans, 2.6 lbs. Smoked it low and slow last night on my SnS kettle. And just as I was putting it on, it started to sprinkle with more rain coming. Marvelous. When the IT hit 80 F, I turned it over. When the IT hit 120, I took it off. My plan was to sear it on the Weber, but changed that to searing it in the kitchen on my cast iron pizza pan with the rain falling. I patted the surface meat dry with paper towels before searing. Thirty second sear on each side twice, plus the edges. During the cook I was using my Wooly Bully on the SnS which is designed to retain heat, but it actually did a great job of fending off the cold rain and keeping my SnS kettle at a consistent temp. Without it, the rain would have caused the cooker temp to drop - with cold rain hitting the lid. So that was an unexpected bonus. :D

Nice Mark. That is one of the largest tri-tips I have ever seen. Curious why you pat it dry before searing, never heard of that? I assume it's supposed to give it a better sear?
 
Yes! It won't sear while it's wet. If you want a good sear without overcooking the interior of the meat, you gotta dab that water moisture off the surface of whatever. It gives you a head start. Otherwise, you waste time and energy while the water heats up, boils, and steams off. And you risk getting that "grey line" just below the surface. This good advice is in various cookbooks and YT videos.
 
Oh yeah, I wanted to comment on my brisket hold at Corolla. We were discussing brisket holding ovens in Aug, I think. This cook described here was in late Sept. Since the beach house oven didn't hold below 170, and holding it at 170 the year before didn't work as well as I hoped, I figured I'd just hold it in my drum - my Oklahoma Joe Bronco. Should work, right? Just get it to stabilize at 150 F and hold the brisket in the smoker as if it was a holding oven.

It worked but not like I had hoped. I had smoked the brisket all night. That went fine. Then I wanted to hold it all day at 150. That didn't go quite according to plan. I would get it at 150 F, but I couldn't get it to stabilize. The cooker temp would always move up or down, one way or the other. Stabilizing at 225 or 250 or 275 is easy! But 150? Not so much. If a cloud came overhead, the temp would drop. If the sun was out, it would rise. So I was constantly making micro-adjustments to the air intake, which would reverse the direction of the cooker temp, but then it would go past the 150 mark. Wouldn't stabilize. So bottom line is, yes, it worked in the long run, but no it never stabilized. I had to constantly adjust it all day long. So I pretty much sat there in shorts and bare feet, reading my book, shucking live oysters with lemon slices, and watching the smoker. I can think of worst ways to spend the day.

The brisket cook came out great. Everybody loved it.

Next time I'll try using my Billows with the Thermoworks X4. That should work perfectly. I hope.

We've rented houses in the Duck area right next to Corolla and we loved it. Aside from the traffic jam on Rt. 12 on move in day, that is a great place to stay. Normally, we stay further south around Avon/Salvo/Rodanthe areas.

The only smoker I could ever get to go that low consistently was my very first smoker which was an electric one by SmokinTex. It was a little chest box that took wood chips so not the greatest smoker, but it was awesome for lower temps to cold smoke and hold at 150 F. Glad it worked out!
 
I have a cold and I think the only thing that is going to make me feel better today is doing some BBQ-ing :)

I am going to pick up a nice tri-tip at my butcher shop, marinate it, and do it Santa Maria-style. I have a lot of options, but I think today I will throw it on the pellet smoker at 170 for 90 minutes, and then reverse sear on my weber kettle. I'm going to make a chimichurri sauce to go with it. For sides, going to do some homemade garlic potatoes, and some roasted broccoli with lemon/garlic/parmesan.

If this doesn't perk me up, I don't know what will?
 
Today's gonna be a pretty nice day here for mid-November. High 61, wind from the SSE at 7 mph. - which basically means no wind when it comes from that direction - it will just breeze overhead. I'm gonna do some smoked short ribs from Boarman's. Bone in, but not the "plate ribs" - these are sliced individually and cut five inches long. I have four of them. But they're nice and thick and nicely marbled. I'll use a brisket rub. I'm gonna start them as soon as possible today (I hope to fit them on the SnS kettle), wrap them tight with some tallow around 160 or so, then as they approach 200 F and when I think they're done or almost done, hold them at 150 as long as possible before dinner.

Tomorrow, winds will be 20-30 with higher gusts. Wife is making chili with some leftover Boarman's tri-tip meat, some Boarman's homemade bacon, and some Boarman's homemade ground sausage. She makes really really really good chili. It's the same chili I brought on the plane to Seattle for the ES tailgate in 2008. Everybody loved it.

For anyone interested, Costco has slabs of Prime boneless ribeye for $75.00 off per package. Average price, before the discount, is ~ $350.00.
If we didn't need the freezer for venison, I'd be all over that. Prime whole packers have gone up a dollar, and are $5.99lb, which is still cheaper than the chuck roasts..

Here is my cat. It's 38 F outside and the wind is blowing, but my cat is warm and happy, guarding the turkey all afternoon.

Here it is, fresh off the OK Joe Bronco drum smoker - rated best smoker overall for 2025 by Men's Journal. I slipped fresh sage, rosemary and thyme under the skin. Came out great!
