What's for Dinner?

Here are some tex mex tacos Non-FB Anne made earlier in the week. We do a really good job on tex mex tacos. DLSF once wrote on FB: "Our tacos are the best tacos." She was probably in HS back then. And they've only gotten better.

The "we" and "our" above is actually "my wife" because she basically does the entire cook. I'm afraid to mess with it because I might screw something up. She uses half ground beef and half refried beans. I used to think putting beans in the meat was a stupid idea, but I was dead wrong. Also, the shells are your simple standard El paso grocery store shells, right? "We" ignore the instructions on the box. "We" bake them for thirteen minutes at 350 F in a pan or a cookie sheet. But for some reason, these came out really nice. They were so light and crispy and crunchy. Really a great dinner.

No, these are certainly not as good as Birria tacos, but these are tex mex, not mex. Birria tacos is a whole different thing. Birria is my cook.

I love 'Americanized' tacos, which is what I call your tex-mex version here. Super simple and I love the crunch of cheapo American taco shells. Americanized tacos for the 'W' (love that logo)

There it is! Made this Sunday night after shopping fresh fish at Jessup Wild Seafood. It was wet/rainy out so I had to cook inside.

Couple Mondays ago, HT sent out emails for live Maine lobsters for Father's Day. $12.99. Yeah, okay. $12.99 is as good as it gets around here. I signed up for four. Pick up Friday before Father's Day.

Daughter is not going to make it - grandson has the sniffles. Shoot. That means wife and I have to eat two each.

Non FB Anne and I picked sour cherries today at Larriland Farms.

She's making two cherry pies with these. Serve warm. Breyer's vanilla ice cream in the freezer.

Meanwhile HT didn't have the lobsters yesterday so I picked them up today. And the seafood fella way in the back was watching the door and saw me when I walked in the front door. He knows my face. Apparently I'm the only guy who ordered lobsters for Father's Day. He then wheeled out the lobsters in a shopping cart all ready to go in their four respective boxes. He met me half way in by the cheese island. He also gave me two jumbo crab cakes for free because they didn't have the lobsters yesterday. Pretty good service, right? These lobsters were fresh live right off the truck. Three of them were pound and a quarter, one was pound and a half. That's bigger than normal for HT. And they were kickin' pretty good.

Plus HT had some kind of deal where you get $10 off if you spend $75. It wasn't even a coupon, it was some kind of automatic deal if you entered your phone number.

So I ended up paying $61 for four good sized live kicking lobsters and two jumbo crab cakes (free) and a bag of chips.

I'm not sure how the math works on that, but I'll take it.

Win win win.

Larriland is a great orchard. We like Rock Hill Farms too, but Larriland is the best.
 
Rock Hill Farms? Never heard of that one. Might have to check it out some day. Larriland is getting awfully crowded on the weekends.
 
Bought some Tomahawk pork chops at my local butcher. I feel so dumb, because I've never noticed how much exponentially cheaper pork chops are (even very good ones) compared to steaks. I think there's a reason for that, but damn - I bought 4 nice chops for what it would've cost me for one really nice ribeye.

Still thinking about how I'll prepare. Going to grill some marinated zucchini as a side.

Rock Hill Orchard is in Mt Airy, but I just read that the owners are retiring and there won't be any pick-your-own in 2025. Crud.
We don't do weekends at the orchards, but we're off every other Friday.

Still thinking about how I'll prepare. Going to grill some marinated zucchini as a side.
Use any rub, marinade that you like and reverse sear them, just like a ribeye, but watch rubs with too much sugar because of the high heat sear at the end.
I slow smoke them until the internal temp hits 135° and blast them with warp 10 heat on the direct side, flipping constantly until they have a nice sear and 140 degrees. Carryover takes 'em to 145.
 
I have a plan. I'm brining them in ice water, salt, peppercorns, garlic, and some maple syrup, honey, sugar. Will pull them out of the brine in 2 hours, pat dry, then apply a spicy rub. I am going to smoke for 30 minutes at low temp. Will pull off, crank up the heat, and cook on high heat for 5 mins a side or so. Rest for 10-20 minutes. These are nice chops, they will be juicy.

Last night's supper - "Colossal Crab Cakes" from HT. They were about 3/8 pound each. Very nice. Probably not quite as nice as Cameron Jumbo or SF1311 homemade. Served with homemade coleslaw with crushed pineapple in it. Homemade farm-picked cherry pie for dessert.

Hahahha - Spam is apparently a big deal in Hawaii. They love it.

My best friend in junior high school, the guy whose Dad had season tix at RFK in '71 and '72 when the games were blacked out, we would eat lunch at his house after working outside in the hot summer sun, and our big lunch was Spam and baked beans. That's exactly what you need, you know. When you've been outside working hard and sweating with all the gnats that we had back then, in the hot sun and 100% humidity. That's what we would eat.

Slice up the spam. Fry it in a pan. And put some canned baked beans in a small pot. Heat it up. And that was our lunch. It wasn't bad!

Not sure how healthy it was though.

We still laugh about it to this day.


BTW, I noticed yesterday that Safeway has fresh wild sockeye - first of the season. The price is high, $30.49 / lb but it'll come down in the coming weeks. I'm hoping Friday it will come down a bit.
