Breakfast!

I'm so jealous, having a big appetite is a burden. The other day the wife and I split a can of Progresso, that's all she had for lunch. I had my half, a turkey sandwich, a small bag of chips and some artichoke hearts and we were equally full. If I just had a sandwich and pickle or a salad for lunch as so many do I'd be at the drive-thru by 4:00.
 
^^^Hubby was the same. Back in the day, he could throw down a Wendy's triple and a Biggie fry in about 3 minutes...then when the scale said 279, he started making big batches of quinoa and roasted veggies. Drank water. Lost 65 pounds in a year.
 
I love toasted English muffins with melted extra sharp cheddar on top than an over easy egg on top of each muffin BL or D

Add great ham, sausage or bacon if you like!

I heard that lots of people in Arizona, NM. Etc are getting busted at the border trying to bring back eggs.

That's kinda crazy. They aren't THAT expensive yet! I mean, it's not like TP during covid rare either.

One good thing though, if the prices keep going up I might get to talk my wife into getting some chickens. I don't know why she hates the idea. In the Philippines I had 10+ ducks and just about every house in the country seemed to have some chickens or noisy ass roosters that I wanted to murder.

What they call ducks in the Philippines are huge things that almost look like geese. The eggs are like dinosaur eggs too. Cook up 3 of them and make a huge omelette the size of a lasagna dish.
 
My sister lived in NC in a rural area for a while and they had a bunch of free range chickens, maybe about fifteen. So I know a bit about it and it gets complicated. For one thing, the rooster guards those chickens, and if you get too close, he may come and attack you, peck your leg, draw blood. He doesn't care that you're the one that feeds him. And then you got the fox in the nearby woods who will do everything he can to get into that chicken coop, or even attack in broad daylight - and they are pretty smart.

I had a goose egg once. I didn't really care for it, didn't like the taste of it.

Yeah, those duck eggs are different too. They cook up firmer than chicken eggs so I just used them for omelettes with cheese ham onions. They aren't the kind of eggs to just fry up or at least I didn't use them that way.

I looked up those ducks, I guess they are called muscovy ducks, or similar, and are considered an invasive species here in the US so you can't have them. They are usually 10-15 pounds each and make a good dinner too. It's weird that they are banned here. They never banned European Cows because they took over 1/2 the country and replaced buffalo.
 
We will have breakfast for dinner on a regular basis. When I have time I love to make biscuits and gravy. This is the first winter I haven't had salted cod for breakfast.
 
We did too...I make some badass breakfast stuff.
 
My wife made the buttermilk pancakes, I cooked the sausage - Boarman's breakfast links, homemade, local pork.

I love that griddle, btw. Bought it 40 years ago. Old school commercial griddle for a gas stove top. Three-eighths of an inch thick cast aluminum. There are no hot spots or cold spots. They don't make 'em like that any more.

Plates are pre-heating in the oven at 150 F.

And she made the banana syrup which is basically simple syrup with banana bits mixed in and heated. I know it looks ugly but it's really really amazing if you like bananas. It's like heated Chunky Monkey for your pancakes.

Adam Sandler's 'Spanglish' Sandwich Recipe

2 slices sourdough or other hearty country-style bread, toasted
1 (1 ounce) slice Monterey Jack cheese (melted on one slice)
1 tablespoon mayonnaise
4 slices tomatoes
1/8 teaspoon kosher salt
3 to 4 slices cooked bacon
1 teaspoon butter
1 large egg (cook sunny side up)
2 or 3 leaves butter leaf lettuce

 
My wife requested an egg sandwich this morning with mushrooms and cheese. So I sauteed some mushroom slices in butter and EVOO, then slow cooked an egg, barely scrambled, with butter and EVOO. Then placed a slice of cheddar in the pan so it melted goopy. Toasted a couple english muffin halves. Buttered them. Added the egg. Salt & pepper. Sauteed mushrooms. Salt & pepper. Goopy cheese. Crowned. Served with a napkin and a fork.

Right now, it's breakfast time, or maybe even a little late for breakfast, and I'm drinking a cup of coffee. Coffee is kind of like breakfast, right? Because we don't have a coffee thread. Yet. So I am putting this here.

We have a breakfast thread and a dinner thread. We have a burger thread and a BBQ thread. But IMO, we need a lunch thread and a coffee thread.

Anyway, it's Saturday morning, and I'm sitting here sipping my coffee. It's really good. It's really really really good. It's a Hawaiian coffee from Big Island Coffee Roasters. It's called Kona Peaberry. It's rated 94 points on coffee review dot com. Whole bean, fresh ground, direct pour. It's a medium light roast. Recommended.
 
I live really good coffee but I am usually in too much of a hurry to commit to making it!
