What's for Dinner?

Let me know. 205 is a little higher than I did last week, but you should be in good shape.

I made homemade French Onion Soup tonight and I swear to Baby Jeebus it was fantastic. Much better than what you get in restaurants. Took 4 hours to make, deglazed the pan over and over again to get the deep onion flavor we wanted. My God it was wonderful.

Neo, I would love to hear your recipe sometime, as I seem to remember something about cave-stored Gruyere?
 
I pulled what I thought was a roast out of the freezer last night to thaw. It was actually 2 pork chops my wife had bought last week. They were thick cut (2 inches) and I wasn't sure how I wanted to cook them. She looked up a recipe online and slow cooked them in the crock pot for about 3 hours with chicken broth, carrots, potatoes, onions and green beans with some herbs.

Okay. I was telling Goal last night - I just don't think I'm a brisket guy. Spending 12-16 hours smoking a piece of meat, and tasting it and thinking 'okay, that's *pretty good*', well, I think I'm over that. But tonight, I decided to shred that brisket and make chili out of it. OMG. It's got to be the perfect chili meat. Smokey as hell. This may be the best chili I've ever had. And future briskets I spend 12-16 hours on, it'll only be in order to make chili out of it...
 
When I make chili I grill ground chuck patties at high heat to char the outside, then break them up and add to the pot. It gives my chili that great gilled flavor.

When I have a hankerin' for brisket I go here and bring a few pounds home.

Brisket chili is definitely delicious.

Not to offend you, but are you slicing with or against the grain?

I know you are supposed to slice against the grain and no offense taken. I just don't see the big deal with brisket. Maybe I'd change my mind if I had it done by a master.

Heading out for a weekend of camping, but here's tomorrow nights menu. Starting with deep fried gator bits, and frogs legs. Gator taken yesterday, and frogs over the past week. Fresh vine ripened tomatoes slices over mozzarella and fresh basil, drizzled with balsamic vinegar. Main course is Monterrey jack stuffed chicken breasts, and my marinated London broil. Campfire baked pears with cowboy coffee to finish up.

Not the healthiest menu, but hey, it's a weekend of over indulgence.

My (possibly) favorite Italian meal is Pasta Carbonara. I finally found a recipe tonight I made that is as good as what I get in restaurants. Really, really good. I feel full and happy tonight. I will be making that one again...

You use pancetta or bacon?

As for Italian dishes, one of my favorites is sausage and peppers. Tonight my wife thought it'd be a good diea to cook them in the crock pot. I love you honey, but that was a horrible idea!
 
Thick cut pepper bacon. Pancetta would have been wonderful though, might try that next time.

Went to Fleming's for date night on Friday... Super overpriced, but damn their dry-aged ribeye is delicious!!

Finally caved and bought a bottle of The Prisoner red blend. It's $40, which is a bit pricier than I normally go for wine, but I've heard too many good reviews.

Gonna have it tonight with spaghetti squash and meat sauce.

Made Milk-Braised pork chops, a potato-bacon-carmelized onion casserole and... quinoa tonight. The quinoa was better than I thought it would be. I can't see making it a regular staple or anything, but we enjoyed it more than I thought we would. The kids were a bit suspicious, but by the end said they liked it all right.
 
Made Salisbury steak with sweet paprika sauce. Pretty tasty!!

Never had sweet paprika sauce. Sounds interesting. I make a slightly sweet hot sauce, so I imagine it being similar as far as the taste goes?

More of a cream sauce. Recipe gave the choice of roasted red peppers or piquillo peppers, we went with the former. It could be easily fired up I think, by adding some cayenne.
