Don't get me started...I don't eat much chicken at all after seeing a doc about 20 years ago about their processing (I wanna say Pamela Anderson was involved with it???)I mean my guests getting E. Coli or Salmonella from a raw egg dish, with raw eggs not fully pasteurized.
I can't get "fresh" eggs. I'm stuck with American supermarkets, where the eggs come from hens being mechanically rotated & stimulated on an automated assembly line, among other things.
When I am in the Caribbean or in South America I see Americans freak out because they have two dozen egg flats/cartons un-refrigerated all over the supermarket. They don't refrigerate them at home either. Americans are looking in the refrigerated aisle and they are not there
I rarely eat eggs and when I do they're straight from the farm. I literally go thereI have heard about this practice in multiple nations like those areas, as well as some European countries.
I need to research this to confirm it, but I think it has to do with how in America something is done differently, between the time the hen lays and the supermarket,
that requires refrigeration of American eggs. Well, let me ask you : when you're back home in America, do you refrigerate your eggs ?
I think in a lot of ways, American food production experiences compromises and shortcuts, due at least in part to the need to mass-produce at a fast rate, compared to the smaller populations of those countries. When I stop and think about how much chicken is consumed in just one American day, compared to the time it takes to raise them, it blows my mind, and I figure there must be steroids involved or something like that. I don't think our chickens could pee in a cup, and pass a test.
