The BBQ Thread

An update to my draft night brisket is that everyone loved it but me. Some even said best brisket they ever had. It was tender as hell, but my Traeger just can't make a good smoke ring.

I think I'll just do pulled pork for the draft going forward. So much easier and almost impossible to screw up.

No pictures though only because with a dozen guys trying to eat it, nobody wanted to wait for pics.
 
I don't have any fancy add-ons for my BGE. They do make a combination temperature probe and fan that mounts in the bottom vent that is supposed to be able to keep temps very stable for a long period of time (and it comes with an app). If I decide to embrace this method I will probably invest in one. I rarely do overnight cooks so I haven't felt the need for one till now. I did have the MEATER block at one point, but I found it to be very glitchy and not user friendly at all.

Still getting attuned to East Coast time, so a lazier cook than usual today. Smithfield St Louis ribs were on sale at Giant, so I'm doing 3-2-1 ribs on the smoker...
 
Doing some marinated Rib Eyes from my local butcher on the Weber kettle, baked potatotes to go with...
 
Getting there. I love it when one of those buried chunks of wood start to smolder. Played around with these. No dry-brining..just a mixture of Kosmos, Dizzy Dust and glazed for the last hour with Trader Joe's Sriracha & Garlic BBQ sauce. The TJ's sauce is seasonal & insanely good. I just cranked the heat to 260 to caramelize the sauce. I'll be grilling a few ears of corn on the gasser while the ribs rest...

I just stocked up on beef ribs before we head out to Myrtle next week. D & D Meats out in Inwood, WV sell them for $9.99/lb which is a great price and worth the hour and a half drive to get them.

I'll be doing one today with the new hot hold method which means smoke it today and eat it tomorrow.

Spent a good deal of my teen years at Ridgeway Roller Rink, is it still there? It was on 11 if I remember correctly.....

I'm not that familiar with Inwood other than where D&D's is. I did google Ridgeway Roller Rink but didn't really get any hits, so maybe it's not there anymore?

Not surprised, once Dominion opened in Winchester. I loved skating!
